Originaire de Mexico, le chef Fernando Olea, ancien chef de l'Epazote, n'en finit pas de fasciner les convives à Santa Fe depuis 1991. Le chef Olea crée des saveurs sophistiquées mettant à l'honneur les traditions culinaires et autochtones du vieux Mexique et des ingrédients cosmopolites. Son menu volontairement restreint propose avant tout des viandes ainsi que des produits locaux frais. Rien n'évoque plus le mystère de la cuisine mexicaine que le mole, sauce complexe comprenant des épices grillées et concassées ainsi que des graines, des noix, du chili et du chocolat. De nombreuses recettes élaborées à partir de cette sauce comportent plus de 30 ingrédients. Certaines recettes comprennent même 5 variétés de chili. Le chef Olea se réjouit de partager ses moles y compris le "nouveau mole mexicain", créé en 2009 pour commémorer le 400ème anniversaire de Santa Fe en 2009. La grande peinture murale de la salle à manger principale a été peinte et présentée au Chef Olea par Federico Leon De La Vega, célèbre artiste de Mexico.

    From the minute we entered Sazón, we were treated exceptionally by the staff, wait staff, bus boys etc. it was the first time that we were not rushed and because of that we had a lovely dinner. The food was stunning and the creativity was bar none. We went due to restaurant week and we now have a wonderful place to come for celebrations and bringing family here. Thank you chef and all for making our first (but certainly not our last) dinner thoroughly enjoyable.

    Order the Poblano soup. Regardless of how many portions they have left - order the Poblano Soup. All of it.

    I had a party of six come to dine for the first time and the only critical feedback to offer was that I did not appreciate the table we were sat at/the location of where we were seated, relative to the kitchen entrance and the natural flow of your staff. We were seated at a large, round table that was basically in the pathway of the service staff, which made one of my guests very uncomfortable having people brisk past them repeatedly and so closely. We attempted to move our table to allow for more personal space for this one guest of mine, and by extension yours, and was told to not move the table to allow for staff to navigate around us. Understandable however it still made no sense as to why that large of a table was positioned where it was. It was oversized for the space and it negatively impacted our first experience with you all, which was quite disappointing and unexpected for such a luxurious night out. My suggestion would be to replace that large table with smaller ones and move the one we were seated at to a section of the restaurant that more appropriately accommodates that.

    Was a little disappointed. Something seemed off. Server was nice but told us our party of 4 had to either order from the restaurant week menu or the regular menu, no mixing which didn’t make sense to us. 3 wanted the regular menu and 1 wanted the restaurant week menu. After the 3rd time asking why, she finally got the ok for us order from either. Service was nice, synchronized service. Drinks were delicious. Food was ok, no one loved their meal or wants to return for another meal.

    Needed to take a friend for a pre-concert birthday dinner-- and then found out it was Restaurant Week -- NOT my favorite time to go out to eat! Then found out from our extremely nice and professional server (sorry I can't remember her name) that we could also order from the regular menu. Our bill ended up near the same -- but we had 2 wonderful courses of our choice rather than 3 courses from a limited menu. I think the cholula has improved; the note I made the last time I went was that "it sounded better than it was." I had a couple of bites of my friend's order, and it tasted wonderful. I had the duck breast, which was cooked to scientific perfection -- fully cooked but not a minute more for a wonderful texture. Who knew the same combination in a dessert -- poblano mole ice cream, beet garnish and sweet potato chips --could taste so good and not weird? The ambiance, the food and the service -- worth every penny and calorie. In a different class than all the other "destination restaurants" I've experienced in Santa Fe.

    We partook of the Chefs tasting menu with pairing. The eight courses were excellent and the drink pairing enhanced every course. The staff were professional and friendly. A once in a lifetime culinary experience.

    The reputation of this restaurant is well justified. The food choices are creative and well prepared. The cholula was excellent as was the sea bass with mole. However, the most notable thing about Sazon after the food is the staff. They are trained in the continental style. Totally attentive, coordinated service and very supportive of each other. Highly recommend Sazon for anyone visiting Santa Fe. I’m sure locals don’t need a review to decide to patronize this restaurant.
