Originaire de Mexico, le chef Fernando Olea, ancien chef de l'Epazote, n'en finit pas de fasciner les convives à Santa Fe depuis 1991. Le chef Olea crée des saveurs sophistiquées mettant à l'honneur les traditions culinaires et autochtones du vieux Mexique et des ingrédients cosmopolites. Son menu volontairement restreint propose avant tout des viandes ainsi que des produits locaux frais. Rien n'évoque plus le mystère de la cuisine mexicaine que le mole, sauce complexe comprenant des épices grillées et concassées ainsi que des graines, des noix, du chili et du chocolat. De nombreuses recettes élaborées à partir de cette sauce comportent plus de 30 ingrédients. Certaines recettes comprennent même 5 variétés de chili. Le chef Olea se réjouit de partager ses moles y compris le "nouveau mole mexicain", créé en 2009 pour commémorer le 400ème anniversaire de Santa Fe en 2009. La grande peinture murale de la salle à manger principale a été peinte et présentée au Chef Olea par Federico Leon De La Vega, célèbre artiste de Mexico.

We use organic and sustainable products whenever possible. Our menu celebrates the varied and complex flavors of classic dishes from Mexico City, Oaxaca, Michoacán and Puebla. Chef Olea brings these classic dishes to life with modern and New World techniques thereby imprinting his own distinct signature, or Sazón, into each and every dish.     Chef greeted us at door. Waitperson was charming if a little affected. Mole tasting unique. Soup of amore was superb. Main dishes s but less so. Rice under tuna was dry. Vegetables with delicious halibut mole were less than stellar though halibut was excellent.

    Among our favorite restaurants ever. Unique moles, which you can pair with various appetizer and entree options. Truly different and well crafted; artisan-level. If we were local we would come back regularly, but as out-of-town visitors all we can do is fondly remember. James Beard award winner for a reason. Highly recommended.

    The best high-end Mexican restaurant! Everything tasted delicious! Beautiful moles to sample to start the dinner. Gracious and helpful service and the food was to die for. We only had margaritas, which were excellent! They have about 20 types on offer…

    One of the best dining experiences in Santa Fe. Chef is a James Beard winner for 2023 and justly so. The food was amazing as was our server, Karla. The mole tasting to start was a very nice touch and helped guide our dinner selection. You must try the Chef’s renown Sopa Amor which was indescribably delicious. Wine list is expansive…spring for a bottle of Mexican Cabernet which will surprise even the most experienced palate. Do not miss this restaurant if visiting Santa Fe. Reservations are tough so plan ahead. It will be worth it!

    The service was beyond any I have ever experienced. I’m not a fan of mole’ and that is the primary focus of the menu. The squash blossoms and soup of the day were exceptional, but the duck was over done and a little tough. I’m glad I experienced it, but wasn’t overwhelmed by the food.

    Service was exceptional. Food very good. Black bean soup the best part. Fish of the day very good. Dessert ok. Slightly over-hyped.

    We absolutely loved the Decor and Service. Perhaps we ordered the wrong things but we were not particularly impressed. Our guidebook and Condé Nast and a local (who we trust highly )recommended it so we were very surprised not to be wowed. Sorry,

    We went in with high expectations and they were surpassed! The food presentation was a work of art and it tasted even better! The service was the best we have had in a very long time! Treat yourself if you think it’s a little pricey. You will not be disappointed.

    The food and service were great! We were sat by the kitchen door, so that was distracting with all the noise and traffic.
