Ensō Omakase is a collaboration from Chef Robert Ruiz and Chef Drew Deckman. We offer two seatings each day, one at 3:00pm, and one at 7:00pm, limited to 8 guests. We have created an intimate, sustainable Omakase experience, focusing specifically on the ingredients available seasonally here in Valle de Guadalupe. Our produce is grown here in the valley on our family farms, truly farm to table. Our exclusive wines are from Baja California, from Cavas del Mogor, and neighboring vineyards. We work with local purveyors and fisherman to ensure that our seafood is sustainable. That our offerings from the sea are treated with our continued philosophy of using the correct capture methods, the correct species, at the right time of year. Valle de Guadalupe, Baja California is an area unique to the world, constantly evolving with the seasons, our menu reflects the same. Our goal is to explore the history, ingredients, and cuisine of Baja though an exclusive dining experience.

This was the best Omakase experience I’ve ever had. Chef Rob Ruiz is incredible at what he does, and he prioritizes sustainability which is so refreshing to see. Each course was delicious and so well thought out, I can’t wait to go back again.

This was one of our best experiences ever!! Chef Robert Ruiz is amazing, knowledgeable, charismatic and human, and he generously shared anecdotes with us. The food was heavenly. We had an unforgettable night and hope for the best at Ensō Omakase. At some point, our neighbor in the 12 person seating bar spontaneously exclaimed when eating one of his nigiris "this is f...ing amazing!!"...and we all agreed.

Chef Robert is an inspiration. He provided a very intimate experience with us and we were extremely grateful to have him share his story and his culinary art with us. This was the most authentic sushi experience I’ve had.

A lifetime experience! Chef Rob and his team set a spa-like environment against a vineyard backdrop and then deliver a dream to your tastebuds. Amazing to learn about all the local ingredients and to see it come together like art. Each plate was unique and we enjoyed all the layers of flavors. The food is the star here but everything else here was stunning.
