With slow-roasted local meats. Rich savory sauces. Handmade pasta. Fresh-from-the-farm vegetables. Volario’s serves bold, earthy fare inspired by the pasture-rich terrain and fragrant kitchens across the Italian Alps – right here in the Rocky Mountains.

With a menu that changes with the harvest of the season and the catches from the streams, Volario’s surprises the palate with both local produce and faraway flair. As you savor the rustic and robust flavors from the mountainous regions of northern Italy, we invite you to sit back with a nice Chianti and reflect on your day in the majestic mountains here.

Our dishes are hearty and adventurous, much like Volario himself. The legend in the Grand Valley is as old as the pines that shade the creek. Volario wasn’t from these parts. Like many of us, he visited and couldn’t imagine leaving.

Overall, a great experience they were a little shortstaffed and they hustled all evening and tried there very best. The food was good. The drinks were good and the service was excellent.

The food was delicious but we waited an hour before we even got our cocktail. I felt bad for our waiter since the restaurant was clearly understaffed. But once our drinks came, everything else progressed as one would expect

Excellent food - meatballs, frito misto, focaccia, risotto. Attentive service. Noise level prevented us from hearing each other speak.

Great food and wonderful service! We had the Arrabbiata and the bolognese which is like a deconstructed lasagna. David the Manager came to our table and treated us like gold. We’ll be back!

The tie with Devil’s Thumb Ranch is paying dividends. The food and some of the staff are excellent. There are still issues with quality of ambiance and how the staff behave. Example is staff who bang down a handful of silverware on the table when resetting places. It is just disrespectful of guests trying to have a peaceful dinner.

Fresh pasta was a nice change and the server was very nice. The issue I have and why I gave a 2 star review was due to the money grabbing junk fees they impose, 3% on drinks (soft drinks included) and 3% on food. All retained by some devil thumb ranch. No place do they openly tell you this until you receive your bill. Suspicious and Criminal in my opinion. I won’t be back as a result.
