The Water House Project is a modern British tasting menu experience in Bethnal Green, East London.

Chef Gabriel Waterhouse opened The Water House Project with his wife, Patricia in Bethnal Green in Autumn 2021 aiming to bridge the gap between fine dining elegance and a more relaxed, comfortable atmosphere.   Here the team serve a seasonally evolving tasting menu which changes every three months.

We rely on local, seasonal ingredients using these when at their best.    We believe in using small amounts of ethically and sustainably reared meat and fish, and partnering with suppliers who share in our values. Our drink pairings are made up of either wines, sourced from small scale producers or a non-alcoholic pairing of teas, tonics and ferments made by our kitchen team.

Short form menu - Wednesday 7pm & Saturday 12.30pm
(£125pp including alcoholic or non alcoholic pairing)

Long form menu - Thursday - Saturday 7pm
(£155pp including alcoholic or non alcoholic pairing)

This is always a special meal. The food is inventive, unique & sublime. Everything is prepared with such care. Love the drink pairings. Attentive friendly service & wonderful intimate atmosphere. The best restaurant I know.

Wow! Our reaction every time we visit. We live in the US and make it a point to go to The Water House Project. Just returned to sample the summer menu, so 3rd visit this year and 4th overall. Food is amazing but entire dining experience is exceptional. Have sampled three seasonal menus and gets better each time with inventive dishes and excellent front and back of house service. Love the opportunity to meet Chef Waterhouse and the rest of the amazing staff. The opportunity to thank all of them in person for creating one of the best dining experiences we have had globally. Looking forward to a return during the fall our return so we can complete the grand slam!

We have been to the Water House Project several times and have enjoyed their home deliveries during the lockdown. This has by far been our best meal there. They somehow find a way to raise the bar each time.

One of my favourite London restaurants. Really delicious, memorable and inventive; wonderful wine pairings; great experience every time. Especially impressed with their attention to sustainability, through careful sourcing and no waste.

We love visiting The Waterhouse Project, and we’re always so blown away by the skill and commitment to adapting the menu according to the seasons. The service is impeccable, everyone is really friendly and very helpful. We look forward to another visit soon!

I've dined at the Waterhouse Project several times, and each visit has been exceptional, but this last one was the best yet. Every dish was incredible. We did the shorter menu for the first time and it's just the right amount of food and lets each dish shine. Easily one of the best dining experiences in London. Highly recommended!

We enjoyed a very special dinner at the Waterhouse Project. It is my favorite restaurant in London. The food is delicious, the staff is very friendly, I just love the place. Looking forward to go back soon.

Beautifully crafted dishes that celebrate the season and feature foraged herbs and flowers from nearby hackney, beautifully prepared meat and sea food and creative flavors and techniques that make for a truly memorable dining experience. The softly lit interior is beautifully farmhouse kitchen without straying too far away from the effortlessly cool East London vibe that you look for when you go to that part of town, and the warm and welcoming staff introduce the dishes with uncontrived passion and pride. Can’t wait for the autumn menu!
