   The Vermillion Room is fairly pricey; however, the food, service and ambience was excellent.

   We thoroughly enjoyed our Prime Rib and Chicken Pear Salad. I requested a Carajillo, and it was delicious. The Parisian dessert, however, was only average.

   Hello,I am writing this complaint because I am disappointed with how things unfolded during my stay at the Vermillion Room for my birthday on February 14, 2025. It should be noted that my boyfriend and I were on vacation in Banff and specifically chose this restaurant during our trip First, upon our arrival, there was no hostess at the door. We waited for 10 minutes before someone finally came to greet us and seat us at our reserved table.Then, as soon as we sat down, we noticed that all the tables around us had not been cleared of their food, giving the dining room a dirty appearance. There was even a table where the guests had left before receiving their meal. Their dishes were served afterward and remained on the empty table for the entirety of our dinner, which lasted 2 hours… Our server came to see us 20 minutes after we were seated and directly asked what we wanted to order. He did not present any menu or explain anything. We told him that we had not even received the drink menu. After that, we placed our order for both meals and cocktails… but our meals arrived before our cocktails.We saw our cocktails sitting at the bar, ready for at least 15 minutes before our server finally came to bring them to us. For dessert, my partner mentioned to the server that it was my birthday and asked if he could put a candle on the crème brûlée we ordered. The server arrived with the crème brûlée and the candle and explained that he couldn't find a lighter to light the candle. So, he decided to bring a torch from the kitchen and attempted to light the wax candle with it. However, this ended up burning the candle, causing all the wax to melt onto the crème brûlée and also burning the dessert itself… The server then left the dessert in that condition.Our bill was approximately $400. We anticipating this evening, hoping to experience the Fairmont's renowned hospitality. I am bitterly disappoin with how everything unfolded which did not live up to the establishment’s reputation.

    Service was excellent, as expected from a Fairmont property. Cocktails were excellent and well crafted. Food was rubbish, do not come here expecting more than an Outback Steakhouse meal. The wine list was similarly tuned. Make sure to request a table away from the door as we were subject to a draft the entirety of our meal and the host was unable to move us. Us and the only other couple in the section froze for the duration of our stay (winter jackets on inside).
