The Lineup at Food 52

Chef Nelson Infante's menu will be an ode to his home country of the Dominican Republic. He will bring an elevated approach to classic dishes like chenchen (a traditional corn porridge), braised oxtail over rice, grilled octopus, and his father's lauded recipe for Dominican kibbeh. Nelson is currently a sous chef at Shukette, where he works along side his long time mentor, Chef Ayesha Nurdjaja. Nelson's passion for cooking grew out of a family hardship where he found solace in the craft. His menu will be sure to surprise and delight anyone with a taste for Dominican cuisine as he presents his dishes in a whole new way.

Chef Joe Mardaus hails from Stillwater, Minnesota, and his menu is a reflection of an array of midwestern influences. Joe's menu showcases elevated versions of "traditional" midwestern fare, like a state fair donut, or a fried cheese and potato starter, but he also shows off many of the south asian influences prevalent in the area with a short rib pho, and a sour cherry hamachi crudo. Joe is a super talented line cook who is currently working at 63 Clinton in Manhattan. Both himself and his talented pastry chef girlfriend moved to New York after culinary school, and work just down the street from one another now here in New York.

Chef Skylar Mosca's menu will be a display of both seasonality and skill. Their dinner encapsulates the essence of fresh summer vegetables, presented in incredibly inventive yet nostalgic presentations. Dishes like crackers and cheese with house made bologna, a fresh tomato salad with bottarga, or a seafood take on lil smokies (yes, the ones you are thinking of), Skylar's menu will have you surprised and delighted with each new dish. Skylar is an incredibly experienced chef, currently employed as the CDC at the new restaurant, Sailor, in Fort Greene. Their tenure in the city began at the famed Spotted Pig, where they worked until its closing in 2020.
