The restaurant was founded in 2023 by owner Stella Spanu, a Boulder local. Honoring her Italian heritage and embracing her passion for food and hospitality, Spanu’s philosophy is to have a dining experience that stimulates all senses by incorporating visual art, design, music, premier service, comfortable seating and fresh, authentic Italian cuisine. The space, an Art Deco inspiration, was conceptualized and built by architect Miguel Quismondo.

Stella's is showcasing a world-class menu, highlighting traditions from all over Italy, with house-made pastas with imported ingredients directly from Italy, and locally sourced ingredients from Colorado farms. The menu is accompanied by an extensive selection of Italian wines and specialty cocktails.

Thursday through Saturday, after dinner service, the space will transform into a lounge with a dance floor with a state-of-the-art sound system, while guests are encouraged to enjoy beverages, the dance floor, and a wide variety of music.

Great drinks and food. Had reservations, but had to wait 30 additional min for the table, but the drinks at the bar made up for that wait.

The food and drinks were delicious! A little hard to find as there is just an “S” on the outside door. An interesting and unexpected interior. A little loud with club type music playing. All-in-all, we were very happy with our dinner experience and would love to go back if ever back in Boulder.

This was my second time to Stella's. The first visit was for business, and it was representative of Michelin-level recognition. The second visit was personal and didn't live up to the expectations that had been set from 2 months earlier. The portions have gotten larger, the food less refined, and the timing less precise. Our appetizers were amazing, however, the subtle lemon we expect in a Hugo spritz was buried by what seemed like simple syrup. We ordered the gnocchi and risotto as primi. The gnocchi looked like doughy balls rather than a refined, small first course. The risotto was undercooked and over spiced, though the langoustine was very tasty. We shared the short rib as a second, and it seemed like the overcooked beef (yes, over cooked short rib) was recognized by the kitchen deem. A white cream sauce was added that didn't do the dish justice. For $250+ for two, it was a lackluster second visit. I worry that Stella's has lost its way as a Boulder destination.

Outstanding dining experience! Well deserving of their Michelin Star! The Tonno Crudo and Pappardelle al Maiale were standouts of one of the best meals of my life. The service was impeccable!

Great food from starter to desert everything was delicious. Service is always top notch which matcha the whole ambiance.. A great hidden gem.

Our first visit to celebrate a birthday. Very happy with all aspects of our experience with special emphasis on the service from Chris, our bartender/server. He took great care of us and made it special knowing that it was my partner's birthday. Food and atmosphere was great and we will definitely be back!
