The dinner was enjoyable, with the service being the highlight of the experience. Our server at the chef’s counter was exceptionally attentive, joyful, and knowledgeable. Her meticulous attention to detail truly stood out and would be the primary reason to return. The restaurant’s ambiance was impressive. Soft lighting, thoughtful decor, and the intriguing story behind the building and cuisine created a cohesive and memorable atmosphere. The food was decent overall, though some portions seemed more suited for larger groups, and the menu could have provided more detailed descriptions of the dishes. Of the items we tried, the Medai Crudo and Radicchio (more like escarole) Salad were standout bites. The Idaho Golden Trout with pickled fingerlings was also whimsical and enjoyable. The Spelt with Mussels was excellent; it might serve well as an entrée and should be described as a pasta dish to clarify expectations for unfamiliar diners. However, a few dishes missed the mark. The Maitake Furake looked appealing but lacked flavor and depth. The Sweet Potatoes had a nice flavor profile, though the smoked butter wasn’t noticeable, and the crispy capers might benefit from a menu mention as their distinct flavor isn’t always to everyone’s taste. Lastly, while the Tartare’s presentation was immaculate, the dish itself fell extremely short. It was grossly under-seasoned, with unevenly cut beef that made it difficult to chew. The heavy combination of egg emulsion and extra virgin olive oil created an overly oily mouthfeel, lacking acidity and balance. The olive ash flavor was imperceptible, leaving the dish unbalanced and not worth purchasing.

First time visitor. Food was very interesting and well prepared. Quite good. Service was quite good given that the restaurant was just recently opened. Can’t wait to return especially when weather allows the outside patio to be open.

Not worth the hype to be honest. The weight staff were rude. The food was meh. Menu very limited.

The tables were weirdly low, small, and uncomfortable. The squash appetizer was dry, but the leek ash cucumber was good and the highlight of the meal. The bison and venison skewer was tough and had no spice or other flavoring to enhance the mediocre meat. Service was attentive but we felt rushed.

Great experience. Unique space and was a little hard to find the way to Stellar Jays, but was directed by hosts. Great ambiance though and really surprisingly great food.

Great addition to the Denver food scene. Solid beverage options and the menu has a few staples and room to grow. Sirloin, bison/venison skewers, ruby trout were the mains we ordered. We had a 4 top at the chefs table reserved, however the GM of the hotel added a few extra guests to that table so we got bumped. All in good fun…we had a great table and our server was dialed in. A refreshing rid bit is the side bussing and wait staff definitely arrive for top tier experience. We will be back for sure.

The food is delicious, the desserts are not that good, I think for the level of the restaurant they need more creative and better tasting desserts.

We made a reservation Stellar Jay to celebrate my significant other’s birthday while in Denver for vacation. I am so glad we ended up here! The food was incredible and perfectly prepared. Our drinks were fantastic. My partner got the trout and I got the steak and both were heavenly. The restaurants ambiance was perfect for an intimate date night together. The wait staff was so friendly and our ser, Emily, was an absolute gem. Next time I am in town, I will be back.

Some of the best drinks, food and dessert I've had in a long time! I had the Prickly Pear Caiprinha, Bison and Venison Skewers and Stellar Humor Bar and they were all amazing! Not to mention the views from the outdoor rooftop and ambiance inside. I live in Chicago but I will be back just for this place alone. It's a must try!
