Le restaurant State Bird Provisions est en fait l'aventure inventive et délicieuse, réfléchie d'un américain contemporain. Le tout a commencé en essayant de trouver une recette pour servir les cailles qui a lentement évolué en restaurant.

D'après les éditeur·rices d'OpenTable : Manger dans un restaurant étoilé Michelin peut paraître un peu solennel, mais il en va tout autrement au State Bird Provisions. Le plus difficile (et le plus plaisant) est de s'en tenir à sa commande, alors qu'un chariot de dim sum passe devant vous, chargé de pancakes à la choucroute au fromage ou de plats néo-américains aux accents asiatiques. Grâce à une carte toujours renouvelée des chef·fe·s Stuart Brioza et Nicole Krasinski, lauréat·e·s du James Beard Award, chaque visite s'avère encore plus savoureuse que la précédente.

SBP's dim sum format is too difficult for groups with different food restrictions. There were almost no veggie dishes brought around for most of the meal, so we loaded up on carbs for the vegetarian in our party. Toward the end we are all pretty much full, and then the veggie dishes started coming around. À la carte menu has very few veggie options, too. We told staff we had several cilantro-averse people in the party, which they called out for each dim sum dish (lots of which had cilantro). But even the à la carte stuff we ordered came with cilantro, which shouldn't happen since that stuff is made to order. All that aside, dishes are very hit-or-miss. Some were excellent (like sourdough pancakes and black cod toast) but some were unmemorable or even bad. Go next door to the Progress instead. Much more reliable, better menu for all types of eaters, and easier ordering format.

Incredible and inventive food. Surprising value for the number of things we tasted. Love the concept! Knocked it down a star bc it was so unbelievably loud that my iPhone gave me a decibel warning. My throat was a little sore after dinner from raising my voice just to be heard in a table for 2. Booth seating might be better? Absolutely worth going but think about your seating if you or your dining partner has difficulty hearing in loud restaurants. It is a high energy, frenetic environment which is exciting but not “relaxing”. You are there for original, exceptional food, and it is definitely that!

Usually love this place. Last night’s food wasn’t particularly exciting. An average meal there this time round

In addition to unique menu offerings, carts are brought around with about a dozen unique offerings. My wife loved the potato chips with trout dip and scallops. I love the pate with honey infused muffins. Dumplings were also excellent as were the oysters. Each of the unique offerings was exceptionally well- presented and delicious. Our visit was quite a treat.
