Meet your host, Spike I started working in fine dining Michelin starred kitchen at a very tender age. I have been a baker, a butcher and a chef. I have built a set of skills, techniques and philosophies over the past 15 years, that seamlessly translates to a unique dining experience through the dishes that are served on my multi course tasting menu. Every evening, I (Spike) host one seating at 6:30 pm of up to six guests in a small apartment in Leslieville. I will walk you down a gastronomic tour of my culinary experiences, from learning how to make a simple bisque from my father, therein working at Michelin starred kitchen, Le Gavroche, London at 17 years old. The tasting menu, six courses, are driven through the dogma of being aware of seasonal produce and above all technical skills. Menu is created the morning of the dining experience by going to the market and buying produce, seafood, vegetables etc . Thereafter, I will be cooking and baking dishes, right in front of you, giving you a peek into the world of fine dining in top kitchens. All this is in an evening's worth of time spent leisurely drinking, eating a delicious meal in great company and hopefully the best story to tell in the foreseeable future.
