    Bringing chill vibes, visual experiences and tastes of never experienced before! The wilderness culinary experience was beautifully presented to our table, with perfectly paired wine and house made juice. I’m excited to return in the next season, with new flavours to grace my palette!

    I get the concept of foraged food and conservatism but this was terrible terrible terrible.. if you are opting to dine here because of the vegan tasting menu I urge you not too. The flavors were bland, we felt like they served us what tasted like grass, flavors did not go together, nothing tasted good at all, the tarts was inedible like rock hard you couldn’t even chew it and some with the dense “sourdough” bread it was so chewy and you couldn’t even cut through it with a knife. Each dish has some inedible like wtf is this aspect to it - like I thought I was on a prank show. The amuse bouche was the best part - definitely not worth the money at all - had I known it would have been like that you couldn’t pay me to eat there. I just don’t understand the good reviews. There were 6 in our party and we all did not enjoy it

I have checked in with all staff who were working last night to take care of your group and they wanted to apologize as well as the only feedback they were provided with from your group throughout the evening was that your group was enjoying the food and the evening. When issues surrounding food are brought to the servers attention they are able to be rectified, but alas we are in a position where we are unable to fix any issues for you after the fact. I can assure you everything we serve is in fact edible as we strive to be sustainable here and reduce as much food waste as we can.

    A unique experience. A delightful building, excellent service in general. This kitchen has an exceptional ability to put flavours together. I enjoyed everything. I recommend a visit. Only downsides: We were put by the music speaker which was extremely loud. We asked to move to the table for 2 nearest, which we were told was “booked”. Odd as it wasn’t used at all and you cannot book specific tables. There was an immediate offer to reduce volume which, if that happened, left it very loud. Powerfully expensive and small portions. To be fair though, if you are this good you can charge this much. Also the meal was certainly enough for my wife and I, but US people would struggle.

    It was overall a good experience. We very much enjoyed a few of the dishes. We appreciate that they were quite accommodating to our dietary restrictions. If you are in Canmore, worth considering!

    Whimsical, fun, delicious….. You can feel the love in every dish, the staff were extremely friendly and knowledgeable…. Maria our server was fantastic and added to an overall wonderful experience

    I’m not sure if it was an off night because my friends highly recommended Sauvage while we were visiting Banff. It took 3 hours for the restaurant to finish serving two 5-course tastings and one 7-course tasting. I decided to do the juice pairing with my tasting menu and the server forgot to bring out the first pairing after I had already finished the respective dish and had moved onto the next. For the value, there was not enough actual savory food, but there were somehow 3 rounds of dessert. We don’t know why but there were tables that were seated after us who finished and left before us. Again, not sure if it was an off night but we were just confused by the quality of service from what we thought would be a more upscale experience. If this is a reflection of their regular service, I wouldn’t recommend Sauvage.

I will definitely be looking further into this. With regards to the food, with the five course menu we do provide the first three courses as savoury items and the second two are sweet. The mignardise at the end of the evening is a small 1-2 bite sweet offering we provide usually with the bill. We do our best to balance the menu between savoury and sweet. I apologize that you came in on an off evening and the service lacked for you, but we will take your feedback and definitely look into what happened with your group to ensure it does not happen again.     I’d like to start by complementing the impeccable service we received by our waitress Amber and the beautiful presentation that all dishes were given. Also, the place does look beautiful. Now, down to what matters most… Me and my wife have been pescatarians for over 7 years. Our vacations are always combined with culinary experiences of gourmet restaurants around the world. We checked online and thought Sauvage was a good choice. Unfortunately for us and the couple we invited, it was the worst gourmet we’ve ever experienced. First we were given no choice but to opt for the vegetarian tasting since the dishes can’t be combined. That was uncomfortable but ok. Then they proceeded to bring the dishes which consisted of exotic choices of ingredients beautifully described yet very poorly combined. The first appetizer was fried in an overused oil that could be tasted the second it touched our palate. Then came the bread followed by a beet soup and another beet appetizer (creative variation?). None of these was memorable in the least. In fact, we couldn’t finished the beet, lilac, elder, rhubarb because the taste of flowers was so strong and unbalanced, it bothered us. The main dish (white bean, cherry, radish, yeast) was SO DRY that it was literally hard to swallow. To close, we were brought two deserts. We couldn’t tell which of the two was sweeter than the other. Our friends, who are also culinary sybarites, had a very similar experience with their dishes. The tenderloin cut actually had nerves that made it hard to chew. To conclude, for $120 a person, that the restaurant charges for the tasting, we were all expecting dishes that would blow our minds. And they actually did… in the most negative way. To top it off, the “experience” took 2 hrs 45 minutes. This restaurant is so overrated! It’s always a downer to leave this kind of review but, as a food lover and admirer of the art of cuisine, I have to speak my mind about it. Hope it gets better eventually.

We are typically able to rectify issues with food if it is brought to the servers attention, although despite being quality checked multiple times throughout the evening by both the server and myself, no feedback or illusion of things being not your liking was brought to our attention. Our tasting menus showcase a variety of local ingredients and all menu information is available to view on our website prior to arriving, which also outlines questions surrounding mixing and matching of courses. We allot 2.5hrs for groups of 4 so do apologize we ran 15 minutes longer.

    Many of the courses lacked seasoning and were quite bland. Not worth the price - many better options elsewhere.
