One of Hendersonville North Carolina's most beloved restaurants, Never Blue has been born anew in Flat Rock, NC. Ruby De Noche is Chef Jesse Roque's newest venture with business partner Lesley Milhas. They welcome guests to enjoy contemporary American, globally influenced cuisine, warm hospitality, and unparalleled service. The dining room is colorful-chic and whimsical with a romantic-sultry vibe.
Chef Roque was NC Chef of the Year in 2017 and has worked with Milhas at the helm of the legendary Never Blue for the last 10 years. In this new venture, they offer creative and delicious small plates and an extensive, top shelf craft cocktail list. Ruby De Noche is located in Flat Rock Commons adjacent to the Flat Rock Cinema.

Everything our group of four ordered was delicious and completely devoured but we especially enjoyed the wagyu sliders and devils on horseback. The twig and berries cocktail presentation was magical and the atmosphere was perfect for a lively but intimate dinner with friends.

Glad to see it opened evenings. Great place to go when you are attending The Flat Rock Playhouse. It’s just across the street.

We continue to enjoy the service and food. The selections are always tempting and difficult to choose from. We highly recommend this fine dinning restaurant.

Loved it. All 5 star. The only improvement I would suggest is to lower the music. All else, food, service etc was great.

waygu sliders - very tasty. Shrimp and scallop gremolata also great. We will be returning.

Loved our dinner. Small plates ordered 4 and shared plus dessert. Sliders were amazing! Crème Brûlée was a large portion could have served 4! Love the feel and unique environment. Cosy and beautiful.
