Wine pairings available as an extra add-on. Our culinary team uses fresh local produce and the highest quality proteins available to create a rotating menu for the "foodie" at heart. You will be enjoying this experience in a comfortable dining setting nestled approximately 30 feet underground in caverns that were hand built in the 1800s. The caverns were discovered by accident while constructing our parent restaurant, Hudson and Essex. It was at that point that we knew we had to repurpose this piece of history into the most unique dining experience in the area.

In this wine dinner series, we bring you exclusive red wines that aren't typically available by the glass or in our tasting dinners. These big reds are only available by the bottle on our luxury menu at Hudson and Essex & Cypress Hill Winery. Indulge with us as Chef Sierra creates delectable food pairings that are red meat heavy including ostrich, bison, venison and wild boar among additional courses to bring you a 7 course meal with 5 wine pairings. Here is the best part.... this wine dinner will be hosted by Markus Niggli of Markus Wine Company in Lodi, California as this is where we source the quality grapes for our delicious wine. Markus is a very busy winemaker and this visit is not only a rarity but also a treat.
