James Beard Award-winning Chef Andrew Black makes his way back to Skirvin Hotel to open his newest restaurant concept, Perle Mesta. The restaurant will be his first concept to open since winning a James Beard award as 2023’s Best Chef Southwest and will be located on the first floor of the historic Skirvin Hotel (One Park Avenue, Oklahoma City). Perle Mesta will offer breakfast, lunch, and dinner service and the cuisine will reflect Chef Black’s continued exploration of what he calls “possibility cuisine,” a concept he attributes to his style of cooking that explores and embraces the endless possibilities of ingredients, flavors, techniques, and cultural influences. In this context, possibility cuisine involves chefs pushing the boundaries of traditional cooking and experimenting with unconventional ingredients, fusion cuisine, molecular gastronomy, or avant-garde techniques. It may involve a sense of creativity, innovation, and openness to exploring new culinary horizons.

We were there for Christmas dinner, and they were short staffed, however, we still received great service. The food was great and we will definitely go back.

It was disappointing that the Christmas decorations were still not up at the Skirvin where the Pearl Mester is located

Beautiful place. Perfect lighting and music levels. Nate the server was great. We had seat close to kitchen area and would like a little more light and sound isolation from busy kitchen. The pear salad may be one of best salads I’ve ever had. My only comment about food would be that maybe the limited Christmas menu could have had a couple more selections. The 3 offerings were a bit on the high brow side for me. But all entrees were excellent. A great addition to OKC destination restaurant scene

We went Christmas Day which was maybe a mistake. My husband’s fish was over cooked and my pork was dry. The sides were good. They were out of Gray Goose and both of the wines we chose. We settled for a less expensive wine. I really had high hopes for this restaurant. The service was good. Maybe an off night for the kitchen.

This was the one of the worst meals I have ever had. We were there for Christmas Eve. My daughter and I ordered Caviar for our starter. She was told that they were out of caviar spoons. But the waiter was supposed to come back with something. She ended up doing the caviar and its garnishes with her table knife. For the main course, 3 of us ordered the lamb. All of them were grossly overdone. Lamb should be medium rare at most. This was the most well-done piece of meat I've ever had. My daughter and I couldn't cut ours. We requested steak knives and I still couldn't cut mine. My husband had to help me cut mine. The meat was so tough. The waiter removed mine from the bill and he give us 2 free desserts. Also, multiple times, food was brought out and asked if it was ours. It was always another table. The chef is supposed to be a James Beard award winner. I don't know how. He must not be minding the store. We would never go back or recommend it to anyone.

Ambiance and service was good. Pork was very dry and lamb was slightly overcooked after a very long wait.

tee tasted old and the cherry pie desert was served very cold with an additional $8.00 charge for a scoop of ice cream

To have such a wonderful Christmas Eve dinner prepared for hubs and be—well..I can’t imagine I’ll ever forget it. Caribbean Roti to start — beautiful salads, capped off with Roasted Pork & Potato Soufflé— in a word: Yum! Merry Christmas to all at Perle Mesta…for sharing your culinary magic during the holidays……and living up to your famed namesake: surely you are a host with the most.

Our experience was great! From Cocktails, appetizers, salads, to main courses, everything was fantastic. I would definitely recommend Perle Mesta!
