James Beard Award-winning Chef Andrew Black makes his way back to Skirvin Hotel to open his newest restaurant concept, Perle Mesta. The restaurant will be his first concept to open since winning a James Beard award as 2023’s Best Chef Southwest and will be located on the first floor of the historic Skirvin Hotel (One Park Avenue, Oklahoma City). Perle Mesta will offer breakfast, lunch, and dinner service and the cuisine will reflect Chef Black’s continued exploration of what he calls “possibility cuisine,” a concept he attributes to his style of cooking that explores and embraces the endless possibilities of ingredients, flavors, techniques, and cultural influences. In this context, possibility cuisine involves chefs pushing the boundaries of traditional cooking and experimenting with unconventional ingredients, fusion cuisine, molecular gastronomy, or avant-garde techniques. It may involve a sense of creativity, innovation, and openness to exploring new culinary horizons.

Chef Black has outdone himself with Perle Mesta. The ambiance is a juxtaposition of modern and a step back in time. The original floors are beautiful and the space around it is modern with comfortable touches. It was very quiet when my husband and I had dinner but it was also 7pm on a Sunday in OKC. We were served by Carly and she was well versed on the menu and the restaurant as a whole. She recommended the plantain chips so we started there. My husband and I said we needed a Sam’s sized bag of them. They were so light and crispy and the seasoning was the perfect combination of sweet and salty. We then moved to salad. My husband had the radicchio and I had the roasted beet salad. His was akin to a Caesar salad. My salad was roasted golden beets, paired with roasted peaches, burrata, & walnuts. They were both delicious. For our main course we chose the scallops & the hake. Both proteins were cooked perfectly and seasoned well. The sauces on both were excellent and I will be thinking about them for a long time! We finished our evening with the flourless chocolate cake with strawberry compote, which was the perfect end to a perfect meal. We are looking forward to dining at Perle Mesta again soon!

Chef Black has gone and outdone himself. Wow wow wow. Ambiance is almost as amazing as the food. Get the Roti.

Wife and recently dined here during our stay at the Skirvin. We have had the pleasure of dining at another Chef Black property, and this was just as good. It was excellent. I heeded the waiter's suggested dish and was delighted. Service, staff, selection and food was excellent. Atmosphere was very nice. Recently opened so the drink selection was light, was informed changes in the works. Expensive, but that's what we were looking for. Was worth it. I just wish diners these days knew how to dress. Is too much to ask to show the slightest respect. This isn't a Del Rancho. Dress accordingly.

With our dining experience we ordered the truffle fried okra, pizza, and the sorghum-glazed sea bass with crispy pearl black rice, with citrus beurre blanc. The truffle fried okra was delicious and flavorful. The pizza is what you expect from a pizza, it was good but nothing magical. When it came to the sea bass, it was hands down one of the best dishes I've had. It was cooked to perfection with the sea bass melting in my mouth and the flavors were paired incredibly together. I thought the portion size was great for the price too. It's a guarantee that I will be going back to order this meal and more!

Service was excellent, food amazing. Looking forward to them obtaining liquor license so we can try some cocktails next time.

Food was cold. Cold fried calamari and cold kobe beef is awful. No cocktails! 2 choices of wine: red or white. No decaf coffee. Awfully loud venue and just so disappointing overall. Waitstaff were trying but not great.

Perle Mesta is beautiful! The art, the decor and the atmosphere is outstanding. However 45 minutes to get breakfast when there are only several tables occupied is bad! Our waitstaff abandoned us so no coffee refill until our food arrived. The presentation of the food was great but cold waffles is unacceptable. For the price breakfast was meh.

I had dinner and breakfast here. Customer service was exceptional for dinner and the atmosphere is beautiful. The food was delicious and the chef was engaging with patrons. During breakfast they were short staffed and the service suffered a bit. My order wasn't correct and the coffee was like water. However, the server was doing the best she could and I still tipped well. I would go back since they just opened if I'm ever in OKC again. Check them out!

Wonderful experience! So nice to have another great option for fine dining in OKC. We loved everything we had- scallop app, fried Okra app, truffle and mushroom pizza, burrata and peach salad, and the sea bass entree was heavenly! We will be back! Felt like we were in NYC ❤️ Chef Black outdid himself! Thank you!
