James Beard Award-winning Chef Andrew Black makes his way back to Skirvin Hotel to open his newest restaurant concept, Perle Mesta. The restaurant will be his first concept to open since winning a James Beard award as 2023’s Best Chef Southwest and will be located on the first floor of the historic Skirvin Hotel (One Park Avenue, Oklahoma City). Perle Mesta will offer breakfast, lunch, and dinner service and the cuisine will reflect Chef Black’s continued exploration of what he calls “possibility cuisine,” a concept he attributes to his style of cooking that explores and embraces the endless possibilities of ingredients, flavors, techniques, and cultural influences. In this context, possibility cuisine involves chefs pushing the boundaries of traditional cooking and experimenting with unconventional ingredients, fusion cuisine, molecular gastronomy, or avant-garde techniques. It may involve a sense of creativity, innovation, and openness to exploring new culinary horizons.

Presentation of food was beautiful and the food was delicious. The staff was very friendly and informative. Will definitely go back. We tried 2 different tasters The small scallops , steak, and calamari and then we had the ham on the milk bread. Both were delicious and very satisfying. For the entrees we had the scallops and fennel dish and kingklip with clams and beet ink pasta. The scallops and fish were cooled perfectly and had delicious flavor. We finished the meal with coffee and the only dessert they offered which was a flowerless chocolate cake with a berry compote equally delicious.

Disappointing given the potential of Chef Black. Service was abysmally slow on a Tuesday considering it was pretty empty. Oysters while having good flavor were very small. Main course arrived cold and the meat was extremely tough.

I was disappointed in the speed of the service and the overall food quality. By no means was it bad, I just had higher pre-conceived ideas about what this might be like. The Wife had the venison and said it was too salty and I had the Seabass. Both of us gave the experience a 7 out of 10.

Went for lunch. Only 3 other tables occupied. We ordered the deviled eggs to start. Took about 15 mins to come out but the server apologized for the wait and they had added a couple extra eggs to the plate to compensate for the wait. I had a pizza which was very well done. Extremely thin and crispy crust. My husband ordered the chicken which was supposed to be served with couscous. Instead it came with the same arugula salad which was served with the deviled eggs. When I asked our server, he said we must have gotten an old menu. He mentioned that the online menu was always up to date. I had checked the online menu just before speaking with him and it showed couscous. He brought our check without asking if we would like dessert. When I asked about dessert, he said it was a very new restaurant and they were still working on the dessert menu. (The restaurant has been open for at least 4 months.) He offered a flourless chocolate cake which he said was ”very light.” Flourless cakes are not light and this one was extremely dense. Also very delicious. When I commented that the cake was like eating fudge, the server replied that it was “lighter than cakes made with flour.” Clearly he was clueless about flourless cakes. After waiting about 15 minutes for the cake, I finally asked another server if he could check on it. He did and brought it right out. Bottom line: the food was good but the service was seriously lacking. Not sure if we will return.

Went to dine for lunch today. A reservation was for 11:15 AM. Waited at the host stand with no one there for five minutes. There was one party seated and when went to order half of their items were out of stock and it was 11:30 AM. Dishes were brought out not complete due to the lack of inventory. Service was subpar and servers did not know what they still had or had not in the back. Ordered one of their pizzas and we were informed that they were out of dough by 11:30 AM. Such a disappointment, because the food was great in flavor once we found something that they actually had. But between the lack of menu and lack of service and the group next to us making phone calls on speakerphone, I was not pleased or impressed at all.

We're big fans of Andrew Black and Grey Sweater but our breakfast was disappointing. We had dinner at Perle Mesta a couple of weekends ago and enjoyed it - the food was delicious and service was as expected. Breakfast, however, was lackluster. The service was very slow, we had to ask more than once for simple things like sweetener (we never did get the warm milk we asked for), and it took a very long time to get our meal. The chicken and pancakes were good but 1 small chicken leg (didn't seem like it was cornflake-crusted either) and 4 large pancakes seemed a bit odd. The peach syrup was actually pear. The restaurant staff seemed overwhelmed.

The food was excellent as we have come to expect with any of the chef’s restaurants. The service and atmosphere are great. It was a great experience, and we will back to try more of the menu soon.
