James Beard Award-winning Chef Andrew Black makes his way back to Skirvin Hotel to open his newest restaurant concept, Perle Mesta. The restaurant will be his first concept to open since winning a James Beard award as 2023’s Best Chef Southwest and will be located on the first floor of the historic Skirvin Hotel (One Park Avenue, Oklahoma City). Perle Mesta will offer breakfast, lunch, and dinner service and the cuisine will reflect Chef Black’s continued exploration of what he calls “possibility cuisine,” a concept he attributes to his style of cooking that explores and embraces the endless possibilities of ingredients, flavors, techniques, and cultural influences. In this context, possibility cuisine involves chefs pushing the boundaries of traditional cooking and experimenting with unconventional ingredients, fusion cuisine, molecular gastronomy, or avant-garde techniques. It may involve a sense of creativity, innovation, and openness to exploring new culinary horizons.

This was our first time at Perle Mesta and it did not disappoint! The service was excellent and our dishes were delicious - unique and subtle flavors. The scallops, sea bass, and the duck were all excellent. The renovation of the space is very nice. Bravo, Chef Black!

It took way too long to be seated. (There were only 2 tables eating) But once we got a table our server was phenomenal and the food was great!

Iberico ham appetizer was great. Duck and Sea Bass entrees were rated top quality. The scallop dish was OK but light on scallops. Their chocolate desert was shared. Very rich.

Let me first start off by saying wow. We have been coming to the Skivrin for years and always thought that someone could make the restaurant space amazing. Well Chief Black didn’t disappoint. Perle Mesta presents a fresh slate for another amazing food experience in the OKC dining space. The menu and price are commiserate with the hotel and diverse enough for any palette. Our experience was amazing and we will certainly be back again soon. Thank you Chef Black and your staff for the amazing experience!

staff operated like a bad "soft opening". Leaning over diners to serve food to other diners. Pouring new wine into glass already used for different wine. Sea Bass had so much seasoning (nutmeg on sea bass?), there was no fish flavor. Portions extremely small. all of us (4) very unsatisfied with food. Vegetable plate had us all laughing, puried vegetables shaped like little bunt cakes. very over priced, limited selection. all in all, $400.00 tab for four, with wine. don't waste your pallet or your money. Have eaten at chefs Grey Sweater resturauint. Very good. Don't know what's happening here, but its very poorly run.

For our special girls' night, we ordered and shared the prawns feature, Kobe beef and bay scallops appetizer, beet and burrata salad, sea bass, and scallops. To say each bite of each dish was a culinary delight is an understatement. The individual ingredients blended to make each bite extraordinary. The ambiance was cozy and elegant. We chose wine instead of cocktails based on our mood, and each glass was very nice. We were happy we tried the orange wine! Would love to see a tequila cocktail on the list next time. We will be back very soon!

We had a great time and look forward to going back. We enjoyed the decor, it's a beautiful restaurant. My only suggestions for improvement are: 1) the server was borderline aggressive about clearing our table. He kept trying to take our appetizer before we were done, and then he wanted to take our dessert before we were finished. It was a Friday night so I understand wanting to move people through, but there were empty tables and at a higher end restaurant, I don't appreciate feeling rushed. 2) It would have been nice if they used a crumb sweeper - that's a simple and classy touch that seems like it belongs there. 3) The portions are small, which is a Chef Black thing, no worries there, but a side of good bread would be much appreciated

Service was great! The pizza was delicious. The vegetable pasta dish we ordered was a laughably small portion.

Everything about our dining experience was exceptional! The food was unique and sooo delicious. The service was outstanding and the atmosphere was elegant and relaxing. Fine dining at its best!

Knowing what the space looked like prior to this renovation, I was very impressed with the transformation…very fresh, elegant and comfortable. Loved the food and had excellent service. This has become one of our new favorites.
