James Beard Award-winning Chef Andrew Black makes his way back to Skirvin Hotel to open his newest restaurant concept, Perle Mesta. The restaurant will be his first concept to open since winning a James Beard award as 2023’s Best Chef Southwest and will be located on the first floor of the historic Skirvin Hotel (One Park Avenue, Oklahoma City). Perle Mesta will offer breakfast, lunch, and dinner service and the cuisine will reflect Chef Black’s continued exploration of what he calls “possibility cuisine,” a concept he attributes to his style of cooking that explores and embraces the endless possibilities of ingredients, flavors, techniques, and cultural influences. In this context, possibility cuisine involves chefs pushing the boundaries of traditional cooking and experimenting with unconventional ingredients, fusion cuisine, molecular gastronomy, or avant-garde techniques. It may involve a sense of creativity, innovation, and openness to exploring new culinary horizons.

    We are longtime fans of chef, black, and looked forward to dining at Perle Mesa for the first time.  we are regular visitors to the Grey Sweater and The Black Walnut restaurants. The cocktails are on point very good, the fresh oysters also very good however there was a long interval before they arrived. We shared the Kobe Scallop Calamari tasting dish and I have one word to describe this.. SALT way too much salt. I could not eat the calamari we sent it back and I was not offered another, the waiter mentioned taking it off the bill however that did not happen. For mains my husband had the venison which was exceptional however the roasted veg were coated with so much salt they were inedible. I ordered the Lavender Duck, any hints of lavender were lost in an overly salted crust that covered the duck loin, the roasted veg were the same as my husband’s, too salty. I have salt wells all over my cooking space filled with Maldon salt, Fleur de Sel from Brittany and various smoked salts I am a salt fan so when I say the food was overly salted trust me. The flourless chocolate torte which was the only option was described as coming with a raspberry coulis, no coulis it was a ball of seedy granita. I had to request water refills more than once. We had reservations but sat in the bar area which is okay as long as the service is equal to the other tables. I am disappointed and will most likely not be eating there again in the future.

    Early evening reservation told us "out of appetizer" but could give us a pricier one with same ingredients? Ordered pizza but after 45 minute wait were told Chef didn't like the dough and we'd have to order another entree. Which meant the one pizza we could share now was two pricey entrees or leave. They told us they'd give us dessert, I guess to make the disappointment right, without asking if we wanted dessert or if I had a chocolate allergy, which I do. Very disappointed for such a high end place.

    Presentation of food was beautiful and the food was delicious. The staff was very friendly and informative. Will definitely go back. We tried 2 different tasters The small scallops , steak, and calamari and then we had the ham on the milk bread. Both were delicious and very satisfying. For the entrees we had the scallops and fennel dish and kingklip with clams and beet ink pasta. The scallops and fish were cooled perfectly and had delicious flavor. We finished the meal with coffee and the only dessert they offered which was a flowerless chocolate cake with a berry compote equally delicious.

    Disappointing given the potential of Chef Black. Service was abysmally slow on a Tuesday considering it was pretty empty. Oysters while having good flavor were very small. Main course arrived cold and the meat was extremely tough.

    I was disappointed in the speed of the service and the overall food quality. By no means was it bad, I just had higher pre-conceived ideas about what this might be like. The Wife had the venison and said it was too salty and I had the Seabass. Both of us gave the experience a 7 out of 10.

    Went for lunch. Only 3 other tables occupied. We ordered the deviled eggs to start. Took about 15 mins to come out but the server apologized for the wait and they had added a couple extra eggs to the plate to compensate for the wait. I had a pizza which was very well done. Extremely thin and crispy crust. My husband ordered the chicken which was supposed to be served with couscous. Instead it came with the same arugula salad which was served with the deviled eggs. When I asked our server, he said we must have gotten an old menu. He mentioned that the online menu was always up to date. I had checked the online menu just before speaking with him and it showed couscous. He brought our check without asking if we would like dessert. When I asked about dessert, he said it was a very new restaurant and they were still working on the dessert menu. (The restaurant has been open for at least 4 months.) He offered a flourless chocolate cake which he said was ”very light.” Flourless cakes are not light and this one was extremely dense. Also very delicious. When I commented that the cake was like eating fudge, the server replied that it was “lighter than cakes made with flour.” Clearly he was clueless about flourless cakes. After waiting about 15 minutes for the cake, I finally asked another server if he could check on it. He did and brought it right out. Bottom line: the food was good but the service was seriously lacking. Not sure if we will return.
