   Once you get there, wich is not very easy to do. Everything there makes the trip worthwhile. The restaurant, the architecture, the outdoor kitchen, the interior design and art, the ambiance, the food, the service, and the view were simply spectacular.

   Not easy to get to down some iffy roads lol but very much worth it . Food was amazing 10/10 Tried several dishes all top tier across the board . Deserts could have been better

   Great gem that is hidden on top of a hill with beautiful views. The carnitas are one of my favorite dishes here. The ratio of that fatty delicious moisture and flavor are just right. The staff is always kind and friendly.

   Súper rico todo, y el restaurante súper bonito. Un gran lugar para ir en el valle de Guadalupe para vino y comida rica, y una sobremesa larga! Muy atentos todos los del staff

   We were forced to sit on the patio because there was a tour bus taking up the whole restaurant. Would be ok but it’s windy at the top of the hill and there’s a vague horse smell. Also the furniture outside is pretty uncomfortable. Service was spotty - probably due to large party inside. Portions were all over the place and food was generally under seasoned. Cocktails weren’t great - mango margarita was the consistency of puree.

   I'll start with the bad: This place is hard to find, and I just can't believe that the cost of a few well placed signs is prohibitive. When you arrive at the gate that said Once Pueblos, you are at a T-intersection. Left is the big road, obvious, but if you saw it from the approach, you know it's over on the right on the hill (the treacherous road). We went left but it seemed to lead nowhere, so we turned around and went right (OMG, if you're not in a humvee, you're screwed). Two or three sign would have saved us a lot of effort! That said, this place is special, stunning, a destination worth the drive across the border on it's own. The service is so professional, polished, knowledgeable, and on point-- there is nothing north of the border that comes close. We had just dined at the lovely Finca Altazano (which is justifiably beloved in the Valle), and Once is on another level. This is Micheline food. It's inventive, it's careful, it's intentional, and it is food as art in every way. But... Go soon. Because it was also empty when we were there. And I fear that they cannot survive without patronage. I hope we were there on an off (Friday) night, but if I were you, I'd go get this experience while it's available. The room is gorgeous, minimalist but with tasteful art, and huge walls of glass overlooking the Valle (perfect for the cold evenings). This is elevated cuisine where they got everything right. It mystifies me that it was not packed and wait listed for the weekend.
