Olivine is Grand Wailea's oceanfront culinary destination where the natural bounty of Maui is perfectly paired with the art of coastal Italian cuisine. Named for the green mineral that produces the gemstone known as the “Hawaiian diamond,” Olivine’s rustic open-air interior incorporates the striking hues of this mineral, inviting diners to gather both day and night in an al fresco setting framed by large open windows with sweeping sky, pool, and ocean views.

What a wonderful time at Flights and Bites Friday night. Met new friends. Excellent tastings. Delicious amuse bouche. Sommelier Ryan was great. Service by Lori was fabulous. Chef phenomenal choices and presentation. Thank you @Olivine for a wonderful time.

Restaurant has Maui vibe. Chill relaxed. Staff attentive More signage needed how to find it on the property. a few dishes salty and not accurately described. Focaccia was actual a small bread loaf, not flat and airy with evoo. The meatball sauce definitely salty. Not sure if salt and too much cheese. Squash blossoms were good but didn’t care for the spicy sauce and fresh honeycomb - salty savory sweet spicy was not a good combo for this dish. The grilled salad was just a roman and few pieces of radicchio. Grilled should actually have grill marks and wilted. this was a green salad. Chicken piccata was too salty as well. Chef and staff need to sit and try each dish and adjust.

Server had too many tables. Salad made it to table half way through meal after reminder it had not arrived. Food was good. Beautiful location and views of beach and sunset.

I was not expecting a sports bar inside an Italian restaurant. There were several folks at the bar who were having a rather "great" time. Baseball on the TV. At sunset?? The food was meh. I ordered the Cacio e Pepe with spiny lobster. The lobster was overdone and the pasta was chewy and drowning in sauce. Had I seen a picture of how it was served before ordering, I would have chosen differently. Not how that dish should be served at all. I went because I wanted to try the crispy squash blossoms. They were delicious, very rich and full of burrata. Should have stuck with the appetizer and drink, and went back to Matteo's for pasta. My server Karen was attentive and pleasant!

Asked for steak to be cooked for medium rare, however when the steak was put on the table it was just well done Totally not a pleasant experience. Did not offer any make up. Just the manager came over to the table and apologized

We had an amazing dinner at Olivine for our first night in Maui. The food was absolutely spectacular, from antipasto to entree. The drinks are incredible. We had a first rate server in Lori, who attended to our every need. We only wish we could have eaten and drank more so that we could experience every dish and cocktail this absolutely singular restaurant had to offer.

Butternut squash blossom pizza is always one of the best we have ever eaten. Olivine pizza is also excellent. Service this time was a little slow otherwise everything was top notch.
