Meander embodies relaxed indulgence. Be prepared to enjoy your multi-course meal carefully and thoughtfully crafted by Executive Chef Dan Gullickson, who designs the tasting menu each evening. Courses range from five to 12, depending on fresh ingredients available from on onsite greenhouse, the season, and any themes we may be highlighting (such as Chinese New Year or St. Patrick's Day).

Our bar is finely curated to offer mid- to top-shelf spirits, with an curated wine and beer list. All mixes, salts, and syrups for cocktails and mocktails are made in house and augmented with fresh ingredients.

The dining room seats 18 people, so each person's experience is personal, private, and delightful. We only offer one seating in the evening at 6:00. Bar opens at 5:00. Meander is the onsite restaurant for Shortgrass Resort, built by Cappie, Alex (Sprout), and Rachel, as seen on Building Outside the Lines on the Magnolia Network and streaming on Max.

    Meander is a lovely evening, an exclusive dining experience, a time to connect and savor. Chef Dan sets the multi-course tasting menu, based on what's fresh from our onsite greenhouse. If you're looking for a themed night, use this experience to book! We are open Thursday, Friday, and Saturday evenings with availability for one sitting at 6:00. We offer a full bar with cocktails, mocktails, and a curated wine and beer list. The experience is exceptional and will be an evening to remember. Bar opens at 5:00 p.m. Please let us know if you have allergies or restrictions in the notes of your reservation.

    My husband and I ate at Meanders restaurant Friday night. Chef Dan cooked amazing dinner. The food was amazing, I was able to enjoy the smells, the texture, and the visual platting of the food. Each dish tasted wonderful as I rolled it around in my mouth. We will come back again.

    My husband and I learned of Meander Restaurant two days before going. It was dark upon arrival so all I can say is we felt we were secluded from life and were greeted in the parking lot by Cappie himself. Upon reaching the entrance, we were met with a warm, inviting space filled with beautiful handcrafted artwork and nicely appointed tables. It’s quaint with seating for around 16. The bar was open and Alex made the best gin martini I’ve tasted! We spent a good while getting to know Cappie, meeting Sprout(absolutely delightful), before guests arrived for the 6 pm seating. I had know idea Cappie would be assisting with the dinner service! Chef Dan came out and introduced himself and each dish. From one dish to the next, they were meticulously plated and absolutely mouthwatering! The menu started off with an amuse-bouche, followed by a twist on caprese salad, then a pasta course(my personal favorite)! The seafood course was a beautifully prepared salmon dish, then on to the meat course of Braised Beef Cheek paired with mushroom risotto. Dessert was a deconstructed Tiramisu. I can’t say enough that Chef Dan is very talented, cares about every detail which results in amazing food! From mini “tacos” made from Parmesan and potato, to skinned tomatoes garnished with baby basil, pasta made perfectly Al dente, it all was stunning! Oh I forgot the homemade focaccia! No doubt we will be returning because it was worthy of repeat business but I must admit, the hospitality shown to us was as appreciated and as special as the meal! We spent some time after getting to know Chef Dan and by the end of the night, we felt welcomed like family. Meander is how a dining experience should be from start to finish! I can’t wait to return!!

    Meander exceeded expectations for my small birthday dinner for 4. We took a quiet dirt road in the middle of a snowstorm, to arrive upon the well designed resort. Cappy and Rachel welcomed us personally as we entered the cozy dining area. We were guided to the bar where the mixologist showed his talents with a custom drink list to match the evening’s dinner theme. Our table was nicely spaced from the others, even though the room was full, and we enjoyed the ability to visit during our 6 course meal. The food was delightful and designed in a New York style theme. I highly recommend making a reservation if you’re looking for fine dining in the Black Hills!

    This is an extremely special experience. If you have the chance, go! We will be back as often as we can, even though we do not live in the spearfish/Belle Fourche area. I can’t say enough amazing things about the experience at meander!

    Our experience at Shortgrass was exceptional, from the very warm welcome we received on arrival throughout the amazing food and service. Thank you Shortgrass for a fantastic experience.

    This was absolutely the best dining experience we have ever had. There is nothing that compares to to Meander in our region. The 7 course culinary journey was well planned and executed, with each dish building on the previous. You will experience a flavor and texture journey that you will never want to end. Chef Dan and mixologist Alex are both artists in their respective crafts, you as the guest will feel honored to be a part of their creations. We will definitely be returning regularly.

    This is a special place. The ambiance, the service and cocktails were all great. I am usually disappointed with grass fed beef and unfortunately this was no exception.

    The atmosphere, setting and service was wonderful. The cocktails were great and the bartender went out of his way to make sure we got what we wanted. The tenderloin entree was excellent.

    Beautiful view, fun decor and unique drinks. Food options were all delicious which made it hard to choose. So amazing we have a creative sophisticated restaurant in our area to go to! Highly recommend.
