Du Mamma Melina, le Seattle Times du 26 août 2010 a écrit : « Les trois frères Varchetta ont si soigneusement repensé le Mamma Melina qui vient de déménager, que même leur propre mère ne reconnaîtrait pas le lieu, alors qu'il a été baptisé en son nom ». Le nouveau Mamma Melina, qui occupe l'extrémité sud de la résidence Corydon, près du centre commercial University Village, compte des points communs avec l'élégant restaurant en centre-ville des frères Varchetta, le Barolo. Un jour d'été, vous croiriez qu'il s'agit de Rodeo Drive et non du sentier Burke-Gilman qui longe la vaste terrasse à l'avant du restaurant. Parmi les bassins peu profonds, ornés de globes d'argent qui étincellent au soleil, vous dégusterez, des lunettes surdimensionnées sur le nez, un verre de vin dans des canapés agrémentés de coussins moelleux, ou des pâtes faites maison à une table recouverte d'une nappe blanche, sous des parasols en toile.Et le tout, à un prix raisonnable par rapport à la qualité de la cuisine.

                                                          Pizza napoletana: Authentic Neapolitan pizzas are made with San Marzano tomatoes grown on the volcanic plains to the south of Mount Vesuvius, and fresh Mozzarella. The genuine Neapolitan pizza dough consists of wheat flour, natural yeast, salt and water. For proper results, strong flour with high protein content must be used. After the rising process, the dough must be formed by hand and may be no more than 3 mm (⅛ in) thick. The pizza must be baked for 60–90 seconds in a 485 °C (905 °F) stone oven with wood fire. When cooked, it should be slightly crispy on the rim, tender and fragrant in the middle.                                                                             I am more than irritated by businesses like Mama Melina’s that have a little note at the bottom of your check, which is way over priced in the first place, that says that they are charging an extra 3% because the cost of food has gone up and none of the extra 3% goes to the staff. The cost of food going up is just like any business that survived the post-pandemic costs rising. It’s just the cost of doing business. It should come out of your profits, not the consumer’s pocket. None of the 3%, at the very least, going to your excellent staff is sickening. Gosh, I wonder if I told my grocery store I should always get a 3% discount because the cost of food has gone up they would agree. Of course not. Further the quality of your food has gone down. My husband’s rib eye, for example, was 1/2 fat and tough. My seafood and linguine tasted nice, but my dish was so filled with just green salad stuff to make it look bigger than it was, I could not take a bite without the green stuff sticking to it. Oh, and $12 for a scoop of ice cream is just ridiculous. So, while your bread and drinks are delicious and your staff is very nice, I can’t give you a glowing recommendation on your food or the way you do business.

                                                                            Great location, great team, pasta slightly overcooked, and a little dry but did have good flavor. Tiramisu could use a little improvement- it had more cream than biscuits dipped in espresso that I would like. Good evening as the overall ambiance is nice and the service was great.

Service excellence is something we always strive for, but unfortunately, last night we had several key staff members call out due to illness, which combined with UW Move In week causing one of our busiest Friday's of the year, resulted in some service struggles. My staff did their absolute best and I am very proud of what we were able to do given the circumstance, but I apologize that we were not up to our usual standard for your experience.                                                                             Mamma Melina is such a go to. Very consistent with service and food. The lunch menu is full of delicious options. Fresh and welcoming atmosphere. For lunch with a friend it was the perfect spot.
