With good tidings and plenty of cheer, we're serving up a seasonal menu inspired by a scorching Aussie Christmas in the sun, with sips to match. Think Coffs Harbour tiger prawn crudo, with sambal, prawn chips, pickled Jervis Bay mussels, with John Dory tarama and fennel, and grilled to perfection, dry-aged Byron Bay Borrowdale pork chop, dripping in Native Xmas glaze, served with BBQ pineapple. Our classic burnt Aussie pavlova, fresh mango, strawberry gum chantilly, mango sorbet is the festive finish you've been waiting for. Settle in, we'll be serving delicacies from both sea and land with flavours as exciting as the occasion. Executive Chef Jarrod Walsh's menu will keep your taste buds on their toes. Start with a chilled seafood spread followed by K’gari Spanner crab, served on a crispy potato hash brown with desert lime and Aleppo pepper. For the main event, our grilled S. Kidman MBS+5 wagyu sirloin frites, with roasted nori béarnaise, tarragon butter is everything you've been waiting for. Our iconic burnt Aussie pavlova with Davidson plum, summer stone fruit sorbet, strawberry gum and yuzu curd delivers a decadent finish. Our NYE lamington with cherry jam, coconut and macadamia, also drops for one night only.
