Southwestern inspired restaurant and tequila bar opened in Silverthorne, January, 2022. Located inside of Hotel Indigo, we open at 7am every day and serve breakfast, lunch and dinner along with happy hour specials. With elk, bison and cactus, our menu features ancient ingredients in modern dishes. We feature over 200 tequilas, mezcals and sotols behind the bar. Want a fun way to spend your Friday? Come join us weekly at Kucu Tequila Bistro and enjoy new types of tequila while learning the history of how tequila is made and what makes one type different from another. Bring a group of friends or make new ones! During this tasting, you will sample 4 different tequilas with a trained tequila expert who will point out the unique qualities of each while providing you with information on how it was made. Included in the price of the tasting, we will provide chips and salsa for the table to snack on. The experience will last just about an hour. If you choose to have dinner at Kucu following your tasting, you will receive 25% off of your bill.

The birria tacos (ordered 2) were very tender and spiced well. However they were a little on the small side. 3 would have been good but you definitely need a side of rice and black beans minimum to feel full. The fajita plate w rice and black beans add on was AMAZING. Very good portion of steak perfectly seasoned and cooked medium RARE. I liked the sizzling veggies. I’d say ask for extra corn tortillas because it comes with four but you really need 6.

We’ve had breakfast twice and the offerings are just ok taste wise and over priced. Our dining was good but the size of the table was not large enough for 4 people. The owners have several other restaurants in the area so they know seating sizes for tables. Doubt we will return.

Great local restaurant. We love eating there. Fantastic tequila suggestion and the best margherita (their signature classic) I've ever had.

We had dinner at Kuku before attending a play at the SilCo theater across the street. We really enjoyed our meal and the ambiance. We started with fried cactus fries just because we had never tried them. They were very tasty. I had tacos and my husband had a burger. Both were done to perfection. The service was excellent and there was live music which was in the background and did not interfere with conversation. We would recommend if you like elevated Mexican fare.

The food was unique and for the most part very flavorful. I had the poblanos rellanos and they were very bland but another person in our group had the pork hatch green chili and it was excellent.

Good food. Our server was indifferent. I could not get his attention for the life of me, or our tab would have been bigger. Brought chips and salsa after the dinner entrees has been eaten. Server looked really bored.
