We invite you to join us for our playful exploration of flavour, that is equal parts: intuition and experience. With often primitive methods of concoction such as fermentation, smoking, raw dishes, curing, pickling and the magic and unpredictability of cooking over wood fire – all coming together with elegant execution in dishes designed for sharing and pairing. Purposefully a little disruptive, we take an approach to dining that is fun, and encourages looking at traditional ideas from a new angle. This can be anything from getting stuck in with your hands, to rehashing recipes with funky local produce. We never stand still and continue to evolve – just as fire refuses to hold a single form.

Kaandela Restaurante exceeded all our expectations. From the moment we walked in, we were greeted with warm hospitality and an atmosphere that perfectly blends modernity with history. The pork belly and seafood casserole are among the best dishes I've ever had. The service was impeccable; the staff was attentive, knowledgeable, and always ready to offer recommendations that enhanced our experience. The ambiance, with its mix of casual elegance and the charm of Casco Viejo, made our dinner even more special. I’ll be back soon.

This was by far the best meal we had on our two week trip traveling Panama and eating at some of the best restaurants. Food was excellent. This place meets my high NYC standards.

uis coordinated our reservation directly with me and was fantastic. He arranged the chef table, which I strongly encourage you to try. You get to see the chef working, and a great state of the art kitchen. The dishes are fantastic, but you definitely need to try the chuleton cerdo and the pork shank, which is crackling crunch and juicy all at once! The crème brûlée is great too! You just try the house cocktail made from mescal.

He tenido varias desilusiones esta noche, primero la comida salada y el precio completamente fuera de acorde de la calidad y cantidad, pero lo más crítico de la noche fue el servicio. Primero se confundieron 3 veces el pedido y al final, la confusión de los meseros lo tuve que pagar yo ; porque se pusieron intransigentes en querer cobrar un plato que devolvimos sin comernos. Por último el supervisor o quien nos cobró fue súper retador cuando le quisimos hacer saber nuestra incomodidad.
