Jack Timmons grew up in Texas and has lived in Seattle for over three decades. In 2012, he attended BBQ Summer Camp at the Meat Sciences department of Texas A&M, then toured many historic barbecue temples of Central Texas. Returning to Seattle, he bought an offset smoker, imported some post oak, mesquite and hickory, and started the Seattle Brisket Experience.
After more than a year of practicing the art of barbecue, and serving old-school, succulent smoked meats to thousands of Northwest BBQ fans at ‘BBQ Raves’, Jack opened his first restaurant in the South of Downtown (SoDo) area of Seattle – Jack’s BBQ in 2014.
At our newest location on the border of Bellevue and Redmond, we serve authentic Central Texas Barbecue with Brisket, Ribs, Sausage and Chicken. Great craft cocktails including our famous Smoked Orange Old Fashioned. Incredibly good desserts like Peach Cobbler and Pecan Pie. Super delicious Breakfast Tacos. And as always, good times!

Loved the meats and the sides. Fairly heavy smoke flavor. All the meat is served dry with sauce available on the table.
A couple of folks in our party (amateur bbq eaters) felt the smoke flavor was too heavy, but I do a lot of bbq and I thought it was spot on. We had the family platter with a little bit of everything! Plenty of food for 4 adults and a kid; we went home with leftovers.
Sides were great! Especially loved the Mac and Cheese and the cornbread.
Would have been good to have had a few dishes specific for kids (basic burger, non-spicy mac n cheese, etc).
I'll be back!

It was OK. Our waitress was nice. The food was good. The prices were too high... We wished the "banana creme pie" would have actually been pie and not just pudding with wafers. The cornbread is to die for and the collard greens were yummy.
