High expectations, but delivered one of the best meals I've ever had. At one point, literally drinking the last morsel of jus from the jug, and unashamedly wiping the plate clean.
Vesta x Jigs is incredible, and worth the drive to Ballarat to experience. The inimitable @dillonpete is working his butt off to serve you the best of the local best, but rest assured it's not pretentious, it's just simply gorgeous, joyful flavour on every plate. @jhigiboy is an off the charts creative, kind hearted human with an obsession for flavour. His beautiful spirit shines through in every bite, and it's one of life's true pleasures to eat his food. Hearing his inspiration for each course, the joy he finds in cooking carrots in their own juice, and the end result of 'carrot puree on steroids', are just one example of this. Pete's knowledge, wit and extensive connections with local producers and winemakers, adds a special dimension to the meal - sharing from his secret cellar stash and opening your tastebuds to new varieties alike.
