Came in before the Caps game on Monday 5/9 to grab dinner with the group of six - had a reservation but restaurant was completely unprepared and acted like they were doing us a favor sitting us in the bar with no waiter/waitress service - we figured it out and I could understand if we just walked in but that’s why we got reservations. Food was good and on par with expectations service was not for a restaurant of that caliber and cost. I am not saying I won’t come back but less than impressed with that evolution.

People had OT reservations for 11, 11:15, and 11:30. We arrived at 11 for our 11:15. Sign outside door said they open at 12. Door was open where we found the large 11 reservation group. The host said they didn’t plan to open until 11:30 and was surprised we all had OT reservations. He said they haven’t used OT for almost 3 years and they get no reservation feeds from OT. As long as I’ve been going to eat downtown, Hill Country has been available in OT. Despite the mess, they sat all of us at 11:25, opened the line at 11:35, and managed to feed everyone. We got out in under an hour and made it to the hockey game. Good on them for making up the slack, but they appear to have a problem. Recommend calling ahead to make sure they see your OT reservation.

It pains me to give a review like this. Have been going to this place for a while now, but this really stings. Had a OT reservation but originally staff could not find my reservation. Was placed at a high top in the bar area. Server never came to the table, so I gave up waiting and just went to the back to get my food (a person that is a first timer would not know where to go). During this time others tried taking my table not once but twice. Again the server never came to the table and had to chase down my utensils for myself and another table that was having the same problem. Still no sever and had to chase down my own drink. Sorry, but being busy is no excuse for lack of service. Food was excellent, but they can do better than this.

We ate at Hill Country prior to a Capitals game, so the restaurant was full. With an understanding that restaurants are understaffed due to general staffing shortages, there was one server for too many tables and he was working hard, but was unable to perform his duties without keeping everyone waiting. The time it took to be seated was equally as frustrating as there was only one person checking patrons in and seating patrons. We go to Hill Country for the meat and the brisket, which was supposed to be moist, was dry and not anywhere as good as we have experienced in the past. At $36 per pound, it was very disappointing. As many times as we have dines at Hill Country the past several years, we will most likely choose a differenct restaurant in Penn Quarter in the future.

After sending me several reconfirmations about my reservation, I showed up to find the restaurant closed for the night and my reservation unfulfilled. I would have appreciated better communication about this. Even the next day, there was no acknowledgement of this problem. Weird! Luckily every other restaurant in Penn Q was open and I got a table elsewhere.
