It all started in the late 1800’s.. a young Gustav Johann Garbe got on a boat from Bremen, Germany to New York, destined for the North West Territories of Canada. Gustav stood up and stood out, always with family, friends and community at the forefront of his mind. His drive, passion and core values have directed four generations of self made entrepreneurs to where we find ourselves today.

John Garbe, in the name of his great grandfather, has assembled a team of exceptional professionals. The menu has been carefully developed, relying on local farmers and community for unsurpassed cuisine. The service experience is firmly rooted in family and friends. This is Gustav.

    I thoroughly enjoyed my time at Gustav’s. We were seated promptly at a secluded comfortable table, it had a romantic vibe right off the bat. Our server, I wish I could remember her name, she was phenomenal! She was so friendly and funny and genuine, she even lit a candle in my dessert and sang to me for my birthday. My husband and I shared the charcuterie app and it was not only delicious, but beautiful also. The cheese was out of this world! My husband enjoyed his steak dinner and I loved the chicken dinner (mashed potatoes were heavenly!) We had the homemade crème brûlée and cheesecake for dessert and both were incredible. The meal was a 10/10 for sure. Service 10/10. Ambiance 10/10. If you’re ever in Collingwood give Gustav’s a try!

    Amazing amazing amazing We stayed at the hotel and tried this restaurant inside and we were blown away We shared the rib eye steak and sides The service was very pleasant

    I have been at this restaurant several times before and always made a point to come back when I was in town. Last night I was left completely dissatisfied. Our steaks were cooked a level above what we asked for and was cold when served. My son's fries looked and tasted like McCain frozen fries and our server forgot two things from our order however still managed to charge us for it. Scallops were overcooked and risotto was bland. I'm not sure if this restaurant is under new management or got a new head chef but it was not at the 5 star level I have been accustomed to at this restaurant.

    Nice place to go for a special celebration. Food and service was very good. Venue was quietly modern and upscale.

    Celebrated my birthday at the Chophouse with my good long time girlfriend. We shared a wonderful seafood platter for 2. A great appy & a very nice bottle of white wine!

    We had brunch. The food was tasty and piping hot. Service was excellent. I would definitely recommend it. I didn’t see the name of the restaurant outside, but I knew where it was. I asked about signage and was told there was a sign on the highway. It couldn’t have been very visible. Overall a good experience.

    Amazing service, waitress made recommendations, we chose to follow them all and couldn't have been happier. Food was perfectly cooked and seasoned, flavours were bang on. Cocktails were great and wine list was very respectable. Will definitely be back.

    We were there to celebrate my big birthday, which was mentioned in our reservation. Unfortunately, it was not acknowledged at all. So, I didn't The food was good. We ordered the Seafood Platter to share, which was nicely presented, and all the food was tasty. My daughter ordered a half-dozen oysters and the 7-oz Filet Mignon. She said they were all good. Our food bill came to US$245 before tips. We ordered no drinks. We did enjoy our dinner, but the service was lacking. There was no get-to-know-you kind of chit-chat.
