There’s a saying in Japan, ‘Ichi-go ichi-e,’ which means, every moment is one-of-a-kind and something to be treasured. This is the philosophy of our neighbourhood restaurant FUMI, located in the centre of Brighton.
A slow restaurant in a fast-moving city, FUMI is a place where flavours, service and interiors are harmonious.
A simple Japanese inspired menu driven by the seasons, our moods and by whatever is fresh and exciting in the moment.

At FUMI, we source all our produce, meats and fish from small, local suppliers. Nothing is mass-produced or served out of season, with everything we create coming directly from the farm to your table. Each meal at FUMI is a celebration of bountiful harvests, beloved community, and our favourite pairing of food and friends.

Very impressive tasting menu and amazingly attentive and knowledgeable staff, especially Pelin- thanks for the orange wine suggestions! Would very happily come again, quite the gem of Brighton.

Staff super lovely but good not authentic Japanese sadly. Tempura really heavy batter and greasy and noodles more like a Chinese with a rich sauce

This is an excellent Japanese Restaurant with a highly individual menu. Outstanding in every way. I really recommend it.

We had the tasting menu. My vegan version was lovely but my husband was disappointed with his food. Given how expensive it was, it wasn’t really worth the price. The wines were lovely though!

The food was delicious … very very tasty, and the cocktails where very good too the ambience and decor was also fab but the service let them down as we had to wait ages to get our drinks and in between courses … the waiting staff seemed inexperienced which is a real shame everything else was great

Awful service they were bickering about me and my friends because we were just enjoying ourselves and taking photos? How is that an issue. Food wasn’t great. Really annoyed with the staff there it was young girl and an older man with dark hair. Wouldn’t recommend for food or the service. Appalling

As a professional I of course feel sorry that one of my guest did not enjoy the experience, although when asked you said quite the opposite. What I find, on a personal level absolutely not acceptable is that you decided to leave in writing your disappointment, as retaliation. No one was bickering, I very politely asked you after a while, not to seat on other tables apart from yours, to take pictures, since you were moving the mise en place and dropping chopsticks on the floor. I remember joking and smiling with you about the pictures . So what is appalling is being judged, not because the quality of the food or the service, I'd be ready to apologies if this was the case, but because I dared ask you, very nicely to be respectful. So leave the review or don't it is really not important
