There’s a saying in Japan, ‘Ichi-go ichi-e,’ which means, every moment is one-of-a-kind and something to be treasured. This is the philosophy of our neighbourhood restaurant FUMI, located in the centre of Brighton.
A slow restaurant in a fast-moving city, FUMI is a place where flavours, service and interiors are harmonious.
A simple Japanese inspired menu driven by the seasons, our moods and by whatever is fresh and exciting in the moment.

At FUMI, we source all our produce, meats and fish from small, local suppliers. Nothing is mass-produced or served out of season, with everything we create coming directly from the farm to your table. Each meal at FUMI is a celebration of bountiful harvests, beloved community, and our favourite pairing of food and friends.

Every mouthful was absolutely delicious. As veggies we found it easy to choose a varied and exciting dinner. The sushi was crisp, fresh and very tasty, the aubergine was the best I’ve had (genius to have it cut up: melt-in-the-mouth tender and much easier to approach with chopsticks!). We also had the cauliflower ‘steak’ and veggie donburi, both of which were rich with complex flavours, nuanced and delicious. The service was friendly and attentive. It was very quiet when we were there.

In short the experience at Fumi was flawless. I would highly recommend to anyone who is staying in Brighton or passing through. The staff were exceptional and very experienced, our waitress was able to offer suggestion for both food and drink which is always a key thing for me. ( We were lucky enough to try an off menu wine and cocktail which felt special as this didn’t need to be offered ) We chose from the ala carte menu and the food was incredible: we had a nice split of both hot and cold dish along with some sushi. I wouldn’t be able to say my favourite as it was all stand out! Me and my partner will definitely be returning next time we are in the area✨

Service was brilliant as was the food and overall aesthetic. The space was large but quiet, it is definitely a find that needs to be discovered more. Being in a newly developed part of the city it may slip under the radar, but I would really recommend.

Amazing place, incredible food and service We went for lunch mid-week and it was very quiet - perhaps it is more of an evening place. Highly recommend and will definitely return :)

a disaster of a meal. gyoza were tried and left. no rose wine.. one choice of sake. we were informed after 20 mins that the manager and one other were leaving. so minimal choice of wines. no duck was available. no wagyu was available. the ramen was bland and tasteless and left. a shame as the restaurant itself is really well presented, with great decor and smart crockery. we will not return. This was my second visit to Fumi - that 1st meal was memorable - this one was memorable for the wrong reasons .We were handed the wine menu and none of the white wines ,barone ,was available - we found that out by asking for a specific bottle only to be told that was not available then choosing the next one and the same thing being told - in the end I asked what was available …. Very very frustrating . On to the food order - no wagu of either size portion . Only a few of the mains available . Starters saw whole plant sized tempura - not able to be eaten with chopsticks provided . Average and poorly executed. We had starters and left - they have let themselves down badly

Great food . Beautiful di ing room . Just a bit slow . Got the feeling it was busier than expected and it delayed our dishes . On the plus side we were able to enjoy the taste of different dishes individually but the wait between each dish was just too long.

Brilliant Japanese restaurant hidden away in Brighton. The food was stunning with the braised beef short rib and chasu pork absolutely stunning. All dishes were tasty, well presented and interesting. Each dish made you want more as the flavours were well balanced with the beef and pork so unctuous. The cocktails were also very good with exciting flavours. We started off with 5 small plates between the two of us but ended up ordering more as everything was delicious. The restaurant is tucked away but absolutely worth a visit. It’s only about 12 minutes walk from the station. The space is calm and airy and didn’t have the normal frantic to-ing and fro-ing of waiting staff, which made for a relaxed experience. The staff were friendly, with our waiter attentive and knowledgeable despite only working there for a week. We will definitely return so keep up the good work and congratulations to the chef for the delicious food.

Lovely restaurant with very simple but very Japanese aesthetics, the service was extremely good and all the staff friendly and helpful… When it comes to the food, WOW - great selection and the quality of each dish was fantastic… we chose several small plates and one signature, the seaweed salad , the gyoza and the chicken were amazing.. .. drinks selection was good and the cocktails great.. Cannot recommend highly enough!
