Le chef Mark Monette est responsable des délices culinaires chez Maison Flagstaff depuis 1985. Son style unique intègre la cuisine française et les accents asiatiques, réunis par sa formation acquise dans plusieurs restaurants étoilés Michelin 3 fois, en France et en Orient. Mark a travaillé avec plusieurs grands chefs dont Bernard Hermman et Thomas Keller. Au Flagstaff House, le chef Mark a eu le plaisir de préparer un menu spécial pour l'empereur et l'impératrice du Japon, ainsi que pour le Premier ministre du Japon et ses ministres des Affaires étrangères. Le restaurant a également reçu et nourrit plusieurs dignitaires culinaires notables, dont Paul Bocuse, Angela Gaja et Robert Mondavi. La famille Monette est propriétaire de Flagstaff House depuis 1971.     Food was great. But the service was phenomenal! We enjoyed the views and did not have to shout to have a conversation. The staff was on point and the server was knowledgeable and quick with getting our orders put in.

    Mr. Adam Monette, co-owner was friendly and genuinely concerned with our meal and service. The only miss, was the beet salad in 1st course which was mostly a condensed goat cheese, hard and bitter after taste, with a sprinkling of microbeet garnish. The other courses, were exquisite, in perfect portions. The view was exceptional and unmatched by any other restaurant in the area! Valet parking was greatly appreciated! We appreciate the dress code and enjoyed the ambiance with elegantly dressed staff and servants. So many times in Denver, we go to a fine dining restaurant to see t-shirts, shorts, slippers and sandals who are not appreciative of the staff and food prep. I applaude your restaurant, chefs and service staff who love the culinary arts and exhibit in their caring manner. We will are so pleased to have such a fantastic restaurant to escape to in the foothills of Boulder. We are eager to return and share with our most treasured friends and family. Warmly, Dr. Ralph E.     The view is amazing. Our breathe was taken away as we watched the full moon rise out of the clouds as the lights glistened off the snow covered pine trees. Words cannot express how delicious each gourmet course was. The flavors danced in your mouth. Everyone, we interacted with at the restaurant was outstanding. We went there to celebrate our anniversary. They did several little things that made our anniversary dinner a little extra special. (I don't want to spoil the surprises if you decide to celebrate here.) My husband declared after the appetizer, this is our new anniversary tradition. My only advice would be to plan on enjoying every minute. This is a four course meal which took around two hours to serve. It was such a beautiful evening, we lost track of time. I was really impressed when the valet had our car fully warmed when we walked outside. ( The temperature was 8 degrees.) It was an amazing experience.

    Last night, I took my wife to Flagstaff House to celebrate her birthday. As soon as we arrived, until we departed, we received over-the-top 5-star service. The staff was excellent, from the valets to the hostesses, the bartenders, and our waiter, Alex. We started with the cheese plate and bread, which were out of this world. Then we chose the 4-course option that got better and better with each course. We finished with dessert and coffee, accompanied by a special pastry plate compliments of the chef and a to-go bag containing cranberry bread for breakfast the following day. As we were leaving, the valet (whose name I, unfortunately, did not catch) noticed that the battery in the key to our vehicle had died. He ran into the restaurant and found us a replacement battery so we did not have to Uber home to get the spare key. Thank you, Flagstaff House, for going above and beyond and making last night an incredible experience for my wife's birthday! We will return to the Flagstaff House for future special events, as they made this one truly magical!
