Here at Fire + Water we are very fortunate to be settled in one of the best four diamond hotels in the Pacific North West.
We find inspiration in local, sustainable, fresh ingredients that are abundant along the Pacific Coast, where the climate provides many a delicacy in our wild and not so wild spaces.
Our talented culinary team is a mix of different cultures, and those cultures brought ingredients, ideas and approach to cooking that we at Fire + Water describe as West Coast Cuisine.
The palette-tempting menu combined with the casual modern setting and atmosphere of our restaurant and Lounge are a great for family celebrations, a casual drink after work or a special occasion.

                                                          We had Osso Buco and Salmon and both were delicious and large portions. Desserts and starters all super tasty. Server “Kristen” was excellent… very engaging and knowledgeable! Other team members we encountered all took the time to engage and thank us! Highly recommend!!

                                                          We went for the first time last night to experience the dine around menu. It was to die for! We had the potato veloute, the osso bucco and both desserts. The osso bucco was the BEST we have ever had! Fall off the bone, rich , delicious and the accompaniments (carrots sweet potato and red cabbage) were cooked to perfection. The soup was a creamy explosion of flavour and the white chocolate glazed cheesecake took it all over the top. 10 out of 10!

                                                          We brought a group of 5 for the Dine Around Town event, and thoroughly enjoyed it. The food was excellent with many attractive choices and the service was excellent. We all started with an interesting cocktail. Excellent suggested wine pairings for the Dine Around menu, also.

                                                          Service was ok - not great just ok. It was New Year’s Eve and there was a set menu. The lamb was covered in a sauce and I couldn’t taste the lamb at all. I will not recommend this restaurant or ever go back.

                                                          Dined in for two hours. Waited for a long for the food to be served. Says kitchen is busy but the people beside us gets their Entrees first. Korean glazed pork belly was great! But have to wait for an hour to get our Entrees! Steak was full of black pepper and lamb wasn’t great either. Dessert was good! Service was too long and staff wasn’t friendly at all!

                                                          It was just simply too expensive. The value you for what we got was not worth the price we paid. This was the highest amount I have ever paid for food in Victoria and this included 2 very mediocre meals from the kids menu.

                                                          Wonderful experience. Our drinks were good (Caramel Old Fashion - I was dubious - it was really good!), our food was delicious (Seafood Chowder, Grilled Halibut, Scallop/Prawn pasta - served on warm plates), and the service was excellent. Great value. We'll definitely visit again.
