Etch est la dernière entreprise culinaire de Chef Deb Paquette. Situé au rez-de-chaussée de la tour Encore au centre-ville de Nashville, Etch propose une salle à manger privée, un bar complet et une cuisine ouverte avec un comptoir-bar. Au cours de ses 13 premières années en tant que Chef / Propriétaire de Zola, Deb Paquette a reçu des éloges comme étant meilleur chef de Nashville et le meilleur restaurant de Nashville à plusieurs reprises.     Those nights you have the symphony going…. Probably shouldn’t be so strapped for the crowd. Didn’t get the correct appetizer. Wasn’t asked if we wanted a second cocktail. Had to ask for the bill. And my chicken entree…. The risotto was NOT GOOD. Too salty. Undercooked….. and the cauliflower app that I have always loved….. fell flat. What happened Etch? Been a go to for years…. Not sure when I will return.

    The service was great from the moment we walked through the door. The complimentary valet was a nice touch, especially for Nashville. They had a birthday card and seat by the window for us, which was thoughtful and what we had hoped for. The food was very good. They are more thoughtful than a lot of places in their plating presentation. The salmon was great, and we could not stop talking about the goat cheese arancini. I appreciate the creativity of the menu and the elevated food available! Great for a fancy night out, business dinner, or date night.

    Everything was pretty good, but not the level I expected for the price. The roasted cauliflower appetizer comes drenched in truffle oil, which is not mentioned on the menu; we had to have it re-made without it as we don't care for it, especially not in those amounts. The salad was good, though the lettuce could be cut a bit smaller to make it easier to eat. And the entrees were fine, though the pork dish is a bit bland, with the corn cakes being pretty dry. My cocktail was good.

    Exciting restaurant, right downtown but free valet parking. Portions are smaller but delicious, just what we like and the waitress timed everything so we ate at our pace, no rushing. Couldn’t have been better, can’t wait to go back.

    It was busy as a usual Saturday night should be, but this was about our 3rd or 4th time there on a busy Friday or Saturday night. We did have a time constraint, 1 1/2 hours to give us time to get to a concert near by. The waitress was friendly & accommodating of our time constraint & our GF guest. We ordered drinks, appetizers & entrees. The drinks & appetizer came out fairly quickly, & were good! We did wait awhile before our entrees came out, & when we first tried them, mine & my husbands were barely warm, almost cold, must have been sitting for quite awhile, but they did taste good, but given our time constraint & due to the fact that the server didn’t check on us right away, we went ahead & ate what we had, if someone would have checked on us earlier then maybe there would have been time to get it sent back for hot food. Our other experiences were not like this. It took our waitress quite a while to bring the “check/bill”, so we didn’t make it out of the restaurant in a timely manner either. We will probably not go back for awhile, there are other good places to try.
