EDO Gastro Tapas & Wine is inspired by Spain’s tradition of eating small savory dishes, typically served with drinks. Raised in Barcelona, Chef Oscar Amador Edo was exposed to Catalonia’s rich cusine from an early age. Located on the Mideterranean coast, the region offers a generous and varied selection of ingredient options, allowing imaginative results. Our approach offers classic recipes with modern and avant-garde techniques. Here we go. It is so difficult to find a good Spanish restaurant. We had a great experience last night, the jabugo was perfectly chopped and not with a machete, good bread. The egg with caviar and foam was so good that we ordered two. When the croquettes were served to me on lettuce as if they were a taco, I said, here we go again with some madness from the chef, but I was surprised by the right mix. That must be perfect. One comment: the Terrine of Foie gras lacked flavor and was very cold. The sangria was perfect, without pretensions and a thousand liqueurs that take away the flavor of the wine. The service was a 10. I would repeat. Of course.

The food was interesting in both flavours and presentation. They serve delicious food …period. I get the feeling this is a place for those of us looking for a culinary adventure. Get off the strip and go to Edo ! It’s worth every penny .

I will be daydreaming about the caviar and foam eggs(description doesn’t do it justice) for days maybe months to come! From beginning to finish..tres magnifique! If you eat one dinner Vegas let this be it!!

Delicious meal. The oysters were a runaway hit with the table. The red sangria was delicious. The pink was good, but the red was more nuanced. The croquettes were a personal favorite, and the tables second-favorite. They're like chicken soup, but crunchy. We did not have a single dish that was bad, in fact most were stellar.

Absolutely worth it. An amazing tasting experience with great explanations about each dish. If you're looking for molecular gastronomy in Vegas, this place is a must. All the servers and host were wonderful and made our meal delightful for my wife's birthday. I would highly recommend checking out this gem for a delicious and unique culinary journey. If it was on the strip, I would assume something like $250 per person for the tasting course, but this was very affordable in proportion to how great the experience was (basic tasting menu is less than $100 per person!). Cannot say enough good things about this restaurant. You can experience Chef Edo's culinary journey and influences directly in each dish and creation.
