Ilan Cohen is a self-taught chef who began his career in Jerusalem, Israel more than 20 years ago.
Along with his wife Lauren they opened Falafel Bistro & Wine Bar in 2007, DVASH’s sister location, and has been serving authentic-Israeli cuisine to the South Florida community for more than a decade.

DVASH, located in Boca Raton, showcases a modern twist on classic mediterranean cuisine. Imagined by Cohen’s daughter, Anabel Hochberg, the menu is designed for sharing and provides guests with the opportunity to travel the culinary world through their taste buds, using only the freshest seasonal ingredients and of course, a little bit of honey.

    Michael, who was our server, was exceptionally helpful and very nice. The brunch was great- we often get the Israeli breakfast frittata. We spoke awhile with Sophia, who brought us our bill, she was just charming as we spoke about Israel, etc. My husband and I will certainly continue to return. I also want to mention Adi who was kind as well. A very good team.

    The food at Dvash is always wonderful. The Chef’s Cauliflower is one of our favorite appetizers ever, and the hummus is creamy and delicious every time. We tried the Jerusalem Chicken this time, and it was delicious. If you visit this fall, don’t leave without trying the Pumkin Bread Pudding. It’s amazing. Our waiter was attentive and made great suggestions. He even brought peach syrup to sweeten the Sangria - it was terrific. .
