    The food was so good that we went back the second day. Don’t come to the Hyatt without visiting Corn Maiden, you will be missing out. The waitress, Vanya, was nice, attentive, and knowledgeable. This place is a gem in the desert.

    Food was amazing. The corn bisque and the charred corn jalapeño margarita was die for. This place is a must visit when coming here.

    Nestled within the serene and picturesque setting of the Hyatt Regency Tamaya, The Corn Maiden has recently reopened its doors, offering a fine dining experience that is nothing short of exceptional. As a traveling Italian cuisine culinary reviewer, I was delighted to explore the unique fusion of local flavors and high-quality ingredients that this restaurant has to offer. The Corn Maiden's commitment to sourcing locally grown ingredients is evident in every dish, and their limited menu is a testament to their focus on quality over quantity. One of the standout dishes was the succulent lobster meat, generously portioned and prepared to perfection with al dente pasta. Each bite was a harmonious blend of flavors, showcasing the freshness and richness of the lobster. Accompanying the main courses were the delightful homemade blue cornbread mini loaves, served with housemade peach jalapeño jam and creamy butter. The cornbread was a perfect balance of sweetness and spice, and the jam added a unique twist that elevated the entire dining experience. Another highlight was the large portion pork chop, which was cooked to perfection and served with a mini casserole dish of au gratin potatoes. The pork chop was tender and flavorful, and the au gratin potatoes were creamy and indulgent, making for a satisfying and hearty meal. The appetizers were equally impressive, with options such as the Sweet Corn Bisque, a rich and creamy soup with herb oil and freeze-dried corn, and the Crispy Green Chile Strips, featuring NM Hatch Green Chiles and a cilantro lime crema. These starters set the stage for the exceptional entrees that followed. The dining experience was further enhanced by the impeccable service provided by the two-person team. Their attention to detail and dedication to ensuring all needs were met did not go unnoticed. Frequent beverage refills and a warm, welcoming demeanor made the evening truly memorable.     Salads were a little too odd. And, the beets in the beet solid were uncooked or not cooked enough. You could hardly get a fork into them. The roasted carrots with the main steak dish were also not cooked enough. The steak was fine.

    We loved Corn Maiden before they shut down. This was our first time back. A lot of little things added up to a poor experience. The waitress was very nice but lacked any training to be in a high end restaurant. It took her 20+ minutes to bring a bottle of wine. She never topped off our glasses, I guess that was my role for the rest of the night. The shrimp appetizer was tasty but the pairing with the fruit did not meld. The arugula salad was just ok. Our main course was lobster pasta. Again, ok, but not great. The flavors seemed to fight each other. The prices were fair except $4.00 for a glass of sparkling water. My last complaint is that the tables did not have any tablecloths. All the glasses were sweating water all over the tables. We had to wipe off our glasses before taking a drink. Overall food was 2/5, service 3/5, ambiance 4/5.

    Absolutely perfect evening at the Corn Maiden. Celebrated our 30th anniversary. The dinner and service were exceptional!

    Recently reopened. We were excited to return as Corn Maiden has been one of our go-to restaurants for special occasions. I was disappointed with the small portion sizes in relation to the prices. Food was well prepared, but very expensive. Menu is small which is understandable as they get the restaurant back into operation. We noted in our reservation that it was my husband’s birthday. The hostess recognized his birthday but no other service person did.
