COLLETTE is a name that I love. It has been in my family for generations. It means "Victory of the People". The perfect embodiment of my intentions to collaborate with local farmers to do food well for the community that I am thrilled to be a part of.

The owner, chef and location remain the same with a reimagined notion of fine dining:

    Nestled in a cozy spot in Escondido , this farm-to-table restaurant is a hidden gem that delivers an unforgettable tasting menu experience. Every dish celebrates local, seasonal ingredients sourced from nearby farms, transforming humble produce into culinary art. The chef’s passion is evident as each plate tells a story, like a hearty soup that feels like autumn in a bowl, or a fresh salad that captures the essence of spring. The atmosphere is intimate, with a rustic charm that perfectly complements the meal. By the end, we left feeling nourished, inspired, and profoundly connected to the land.

    After reading several reviews I was very excited to try this restaurant, but it didn’t seem to match what I expected. The restaurant had a an older/antique vibe with elevator music and the experience was longer/more of a tasting menu style. A more clear traditional menu or a tasting menu would have let me know what to expect.

    The food was amazing. my experience was a new one and such a great one. The staff, especially Kasey, was professional, friendly, and fun to be around. Definitely going again.

    This weekend, we visited Collette's for the first time. We opted for a tasting menu, as we heard that was their focus for their opening week. Honestly speaking, we were more than impressed. We were blown away. Let me try to give a few details. After ordering our drinks (try the High on the Hog!), we were brought a little starter that had something called dragon thumb beans in a spicy tomato jam. This was served with a house made hummus. This dish was very different but fantastic. We then were served the crab toast that was small and delicate and wonderful. You could taste every ingredient. It was served with little poached crab and a meringue egg. This dish was my wife's favorite. Next, we had the slow roasted carrots. This dish was so complex that I haven't figured out exactly what was it in besides pomegranate seeds, some eatable flowers and a cream sauce under the very sweet carrots that had some sort of mild Indian spice. I could have eaten this as an entree. We then were served the aged New york steak and the Asian inspired chicken. Both were great and filling.  For desert, we were served a pomegranate sorbet,  a bit-sized tres leches cheese cake, and a small piece of the basil / lime curd cake. Each of these was so different and fantastic that it was hard to pick a favorite. As you can tell,  we had a great evening.  We were not rushed, which let us really enjoy such a special meal. We truly appreciate the farm to table approach and Chef Hunsakers amazing talent. We will certainly be back.

    Loved coming in and seeing all the new changes! Hunsakers was great, but Collette’s takes it to the next level. The updated décor is warm and inviting, creating a cozy atmosphere that's perfect for a night out. The menu has some familiar favorites with fresh twists, and every dish we tried was full of flavor. The service was attentive and friendly, making the whole dining experience even better. Highly recommend Collette’s if you're looking for a wonderful meal with a touch of elegance!

    It was so meaningful to attend the unveiling of the Farm to Table experience. Everything was wonderful; the atmosphere, the service, the presentation and especially the food. Look forward to going back!

    Amazing experience through and through. What a successful rebrand from Hunsakers to Colette’s. Delicious food and drinks. We really enjoyed the introduction by the host at the beginning of dinner as well. Highly recommended!

    Our meal at Hunsakers was bittersweet, as it is our last time dining there under their Hunsakers name and concept. They very successfully took a neighborhood favorite (Vincent's) and gradually changed it into Hunsakers, which was more of a steakhouse style restaurant (rather than French, which was Vincent's). Every meal we have ever had here, including their brilliant Sunday Supper Club, has been excellent. The food is prepared thoughtfully and delivered hot and fresh. My Beef Wellington was divine, and my husband loved his super creative Pork Shop meal. My husband raved about his chili soup and his tasty cocktail. The Garlic Parmesan Sourdough bread was delicious, but my only "negative" comment would be that it would have been nice to have a few more slices of that, rather than only 1 slice and the plain baguette that accompanied Garlic Parmesan Sourdough. We are looking forward to Hunsaker's' next restaurant concept!

    It was magical......Celebrating my birthday at Hunsakers. The French onion Soup was delicious. The BEST crab cake I ever tasted ! My Beef Wellington was excellent. I tasted my husbands Lamb and that too was excellent . Gillian was our waitress and she was patient, professional and always had a smile on her face. The quality of the food was off the charts.
