COLLETTE is a name that I love. It has been in my family for generations. It means "Victory of the People". The perfect embodiment of my intentions to collaborate with local farmers to do food well for the community that I am thrilled to be a part of.

The owner, chef and location remain the same with a reimagined notion of fine dining:

    It was so meaningful to attend the unveiling of the Farm to Table experience. Everything was wonderful; the atmosphere, the service, the presentation and especially the food. Look forward to going back!

    Our meal at Hunsakers was bittersweet, as it is our last time dining there under their Hunsakers name and concept. They very successfully took a neighborhood favorite (Vincent's) and gradually changed it into Hunsakers, which was more of a steakhouse style restaurant (rather than French, which was Vincent's). Every meal we have ever had here, including their brilliant Sunday Supper Club, has been excellent. The food is prepared thoughtfully and delivered hot and fresh. My Beef Wellington was divine, and my husband loved his super creative Pork Shop meal. My husband raved about his chili soup and his tasty cocktail. The Garlic Parmesan Sourdough bread was delicious, but my only "negative" comment would be that it would have been nice to have a few more slices of that, rather than only 1 slice and the plain baguette that accompanied Garlic Parmesan Sourdough. We are looking forward to Hunsaker's' next restaurant concept!

    It was magical......Celebrating my birthday at Hunsakers. The French onion Soup was delicious. The BEST crab cake I ever tasted ! My Beef Wellington was excellent. I tasted my husbands Lamb and that too was excellent . Gillian was our waitress and she was patient, professional and always had a smile on her face. The quality of the food was off the charts.

    If you are looking for a small, intimate but lively fine dining location in downtown Escondido, this is the place. We have been to Hunsakers about 4 times a year since moving here 3 years ago. We normally go before attending a show at the Center for the Arts which is right around the corner. It makes for a very special evening. Last night we opted for the Chefs Choice Menu for two. Wow. Hatch Chile Soup, beautiful breads, beef filet in puff pastry over creamy mashed potatoes and greens. Then a beautiful flavor bomb of chocolate mousse, whipped cream over an amazing caramel. Tasted like a candy bar! We are never disappointed with this place and look forward to the new focus (farm to table fine cuisine) and name (Collette's) going forward.

    A hidden gem. Absolutely Amazing food. Every menu item put together perfectly. The beef Wellington is a must try . Very attentive staff. Thank you

    Hunsaker’s deserves a Michelin Star! ⭐️ Chef Hunsaker is a creative culinary genius. The menu changes to include the best, freshest, ripest foods of the season while also offering a few standard favs like the amazing French onion soup. Jeanette and Casey and the rest of the front of house staff make you feel like family. The portions are always VERY generous. If you love great food, even if you’re not local to Escondido, the trip to Hunsaker’s is 110% worth it!

    Went to a date night with another couple and we all ordered the Chef’s recommendation 3 course meal. It was superb! The menu only has the best options so we knew we were going to eat well! The appetizers were seared Ahi and a melon guspacho, entrees were 1/2 beef wellington and 1/2 steak and dessert was cheesecake on top of bananas foster. Generous portions, drinks were good and we loved the sparking water with lime. This is a MUST try place! We would absolutely go back and recommend to friends!

    Fabulous! Best meal we've had in a long time. Caesar calamari salad delicious and unique. Filet one of the best even and a generous portion. I had the short rib tamale. Delicious. As good as in Oaxaca. Martinis great. Jillian took care of us. She made it a special treat.
