Chef Wesley E. Choplin graduated from the prestigious Culinary Institute of America in Hyde Park, New York in 1997.

Chef Wes, as he is fondly known in the industry, has been a sought after chef from his early years at world renowned Pinehurst Golf & Country Club. He quickly became popular for his "outside the box" mentality and later being recruited by many of North Carolina's best restaurants the last 25 years, ultimately becoming the renowned Chef that he is today. His passion for being a culinary artist is truly unmatched.

With Anthony Bourdaine's mentorship at CIA, Chef Wes Choplin has surpassed and achieved many of his culinary goals and received awards for his talent and community service throughout North Carolina. Today, he is the Executive Chef and Owner of Choplin's Restaurant, a true institute, 14 years strong in the Lake Norman area which has gained popularity in the many surrounding cities.

Excellence service as always. Recommend asking for clarification of menu descriptions. For example: caesar salad was described as having almonds and did not mention croutons. We got salad with no almonds but wheat-based croutons instead. This is a problem for wheat allergy.

First time at Choplin's and unfortunately we were very disappointed. The good: - Steakhouse salad - great dressing - Brie pastry was tasty The bad: - First time I've ever had to salt a steak at a restaurant. Zero seasoning and should not have to season myself when I paid nearly $60 for just the steak. Both wife and I had the same feedback on the filet and ribeye - Scalloped potatoes were also under seasoned and just were not good - Service was inconsistent - waitress didn't write down order which resulted in receiving the wrong appetizer and missing the salad I'd ordered. - No wine tasting available, even when you intend to order a bottle and they already serve the same wine by the glass. I ended up buying a bottle that I'd had before, so not a huge deal, but first time I have experienced this. Had this been a meal at Outback or Longhorn, I would have been fine, but at $200 before tip they are trying to present themselves as a more elevated dining experience. The restaurant fell short.

Asked for a martini with olives, received a dirty martini. Asked to delay our dinner order so that all the food wouldn’t come out at one time- waited a long time for the appetizer- then salad and main came together. My fillet meal was warm, not hot. Scalloped potatoes had so much nutmeg (and were not hot) that I could not eat them. Choplin’s let me down last night.

This was a very special Birthday Dinner for my Husband. With close friends! The Chef does not ever disappoint us with his incredible meals! Everything from appetizers to your creative desserts. Options for every one. ! Hostess was helpful and willing to meet your needs. Taylor’s service was impressive! Love your new remodeled restaurant! Thank you very Much.

Not quite fine dining at fine dining prices would be the short story. The blackened halibut was delish, moist and very well cooked. The steak on the other hand…they were unaware of what “Pittsburgh “ style was and made no attempt to do it. I’m lactose intolerant so could not eat their scalloped potato side. They said they could not swap sides so would just upcharge me. That “upcharge” was actually full charge for the side item. I spoke with management and they were very nice and understanding. Definitely potential is there but they have a little work to do.

The menu selection is exceptional, and the food quality/taste is outstanding. Our server, Davidson, was friendly, accommodating, and knowledgeable, and he was very attentive to our requests. The background music was perfect for a romantic and soothing evening with my wife. We will return to Choplin's as often as possible. My wife and I highly recommend this establishment!!

We were a party of 8, celebrating my parents anniversary. Everything was outstanding! Delicious food, excellent service, and great atmosphere. It was a perfect evening!

Fabulous dinner! Took my in laws there for a birthday celebration! Friendliest staff, chef/ owner came out to make certain everything was amazing! Waitress offered wonderful dessert selections! Bananas Foster and Chocolate brownie did not disappoint!! Thank you for a wonderful evening!!!
