Chef Wesley E. Choplin graduated from the prestigious Culinary Institute of America in Hyde Park, New York in 1997.

Chef Wes, as he is fondly known in the industry, has been a sought after chef from his early years at world renowned Pinehurst Golf & Country Club. He quickly became popular for his "outside the box" mentality and later being recruited by many of North Carolina's best restaurants the last 25 years, ultimately becoming the renowned Chef that he is today. His passion for being a culinary artist is truly unmatched.

With Anthony Bourdaine's mentorship at CIA, Chef Wes Choplin has surpassed and achieved many of his culinary goals and received awards for his talent and community service throughout North Carolina. Today, he is the Executive Chef and Owner of Choplin's Restaurant, a true institute, 14 years strong in the Lake Norman area which has gained popularity in the many surrounding cities.

    Sadly, we had a bad experience. The scallops we ate were spoiled / clearly bad - sandy and a strong chemical taste and smell. For the price it was not what you would expect. Won’t be back unfortunately.

    We have eaten at Choplin’s in the past and enjoyed it but it has definitely gone downhill. We will not ever go back! The crab appetizer was mostly cheese and very little crab. Not worth the $17. The lollipop lamb chops were tough and well done when medium was requested. The mashed potatoes were served cold and the sauce over the chops was too much (maybe camouflaging the entree). Sea bass was ok but nothing great and again the rice and string beans were served lukewarm. Filet mignon was about the only decent thing. It was not a memorable meal for 4 and definitely not worth over $300. (Incidentally we only had one glass each of wine!)

    Choplins is going in the wrong direction. Food order was placed incorrectly so 3/4 received there meals while 4th was received twenty minutes later. No real apology given. Prices have increased while portion sizes have been reduced. It’s too bad used to be a really good restaurant.

    We have been to Choplins many times and always been pleased. This time the food wasn’t on par. Brussel Sprouts were undercooked, steak was good but nothing out of the ordinary and the duck was plain with no charred exterior. Chicken wasn’t tender kinda dry. Service was outstanding, decor is cozy-chic but very loud. Hopefully this was just an off night

    French Onion Soup was amazing!! Didn’t have an entree but did share the Burrata and Tiramisu, which were also both delicious! Great wine selection and excellent service! Will return!!

    We had a very bad experience with poor service. Our waitress delivered our food and never came back. My husband had to wait at least five minutes for a cold glass for his beer. Since we could not find our waitress, we asked another waitress for more bread, but it never came. We approached the manager about the issue and she seemed genuinely annoyed with us She told us the waitress was busy. Very disappointed. We have been going here for several years, but don’t think we’ll be going back.

    Amazing family run steak house. Great fish and steaks. Will be going back again when we are in town!!

    Choplins used to be one of my favorite steak restaurants. It is definitely not the same. Appears to be under new management and ownership. The food now was just ok at best. When my food arrived The waitress didn’t bring me a Steak knife and I had to wait about 5 minutes, while my steak got cold before someone else got it for me. Dessert was a small piece of $15 chocolate cake. In conclusion I will not be returning. Not worth the price.
