Chef Wesley E. Choplin graduated from the prestigious Culinary Institute of America in Hyde Park, New York in 1997.

Chef Wes, as he is fondly known in the industry, has been a sought after chef from his early years at world renowned Pinehurst Golf & Country Club. He quickly became popular for his "outside the box" mentality and later being recruited by many of North Carolina's best restaurants the last 25 years, ultimately becoming the renowned Chef that he is today. His passion for being a culinary artist is truly unmatched.

With Anthony Bourdaine's mentorship at CIA, Chef Wes Choplin has surpassed and achieved many of his culinary goals and received awards for his talent and community service throughout North Carolina. Today, he is the Executive Chef and Owner of Choplin's Restaurant, a true institute, 14 years strong in the Lake Norman area which has gained popularity in the many surrounding cities.

We went for my mom's birthday and everyone there made it so special! The server was very attentive and they were so accommodating - including turning down the music because it was hard for my dad to hear. The food was amazing and it all made my mom feel very special. We will definitely be going back! Thank you to Choplin's for making it such a memorable evening. :)

They were spot-on everything! The ribeye steak was cooked perfectly, and the fabulous Brussels sprouts were nice and flavorful, with a light balsamic glaze and dusted with goat cheese. French onion soup simmering in a great broth and topped with yummy gruyere cheese. Just can't wait to go back and try something new. Top quality for sure!

We were celebrating a birthday. Our server was so nice and patient. She did an excellent job with recommendations. We really enjoyed it - my first time and I will be back!! Great wine selection too!

Order filet since there wasn’t a large selection on the menu. The steak had burnt outside, little flavor, and chewy fatty inside. Definitely not the quality of steaks at Epic Chophouse. We were extremely disappointed and we had to ask for tea refills.

Very welcoming from the minute we arrived until we left. Great menu selection. Appetizers and main course were perfectly cooked. Waitstaff,especially JT, was phenomenal. Attentive but not hovering. One of our continued go-to restaurants.

Great place for a relaxing lunch. Varied menu with a broad selection from appetizers, salads, sandwiches to full entrees. Outstanding desert list as well as a reasonable list of wines by the glass.
