Fergus spent the majority of his life as a passionate home chef, until his late 20's when stepped into a professional kitchen for the first time. He quickly got hooked on the buzz of a busy service, but also to need to explore and experiment far more then what is practical in a typical restaurant. Toward the end of 2019 he decided do induce his own baptism of fire, by launching a supper club serving a taster menu of experimental dishes in his home town.
Alkemio is actually the Esperanto spelling for alchemy, Esperanto was a language that was constructed out of the world's languages and had no real home. Fergus aims to take inspiration from cuisine across the world, combining ingredients, flavour profiles and formats in ways you have not seen before, all the while elevating each dish with technique and presentation to make it unforgettable!
