CHARCUT is a proud female majority-owned and operated destination restaurant and bar from Calgary’s CHAR Hospitality Group – founded by Carrie Jackson and acclaimed chefs Connie DeSousa and John Jackson. Our menu draws inspiration from Italian and Portuguese traditions, a nod to Connie’s heritage, while celebrating seasonal, artisanal, and thoughtfully sourced ingredients. From our handmade pastas and vegetable-forward sharing plates to our house-cured meats, butcher cuts, and rotisserie prime rib of Alberta beef, we take a back to basics, back to flavour approach by evolving simple ingredients. CHARCUT offers a true neighbourhood restaurant experience, a place to gather and connect over great food, drinks, conversation, and company.

The Mozza stick appetizer, Insalata salad with white beans and roasted carrots tasted great. Our main dishes of the clam pasta and 10 oz. of sliced steak tasted good but both were just warm and therefore was a disappointment.

Food was great service was challenged that day. Restaurant wasn’t very full but had to chase staff down to pay and also ask for the cookies to go that go with the lunch meal. That was disappointing

Great food drink and service in an energetic environment. Consider yourself lucky if you live nearby this gem and support it regularly. Places this good can't all be downtown.

Finally a super restaurant in the Northwest. The service and food were both magnificent till the end. We were looking to finish a satisfying meal with coffees and dessert. The coffees came expeditiously. Despite inquiring three times about the dessert and being told it was coming, it never did. Since it was already about 5 minutes past the time we finished our coffees we cancelled dessert. This was our first time out at the University location. Sad to say, but we left with a diminished impression of the place. Another thing not strictly under the control of the restaurant was a table of clearly inebriated patrons screaming and screeching to a level that was completely inappropriate for a civilized public place.

Great food, great server! Only one issue … When I tried to modify my reservation (1/2 hr. later) on the Open Table APP it said I had to call the restaurant @ (000) 000-0000. I found the University District Charcut phone number but it said they only receive texts. I sent x2 texts to the number and x2 messages through the Open Table APP to the restaurant…. No one returned my text nor message?!? I don’t believe Charcut monitors this? My friend, staying in the hotel, had to go down to speak with the Day Manager to have the reservation changed …. She gave him ‘a look!’

Food quality is generally about a reliable 6-7/10 overall at the very best. Our previous experience with the steaks was poor because they were shaved so think that we thought it was a joke. No joke. Definitely NOT a steak place despite the name. Thin minute steaks from a frozen TV dinner are more generously proportioned and better prepared. In any case, we tried it again today. This time we had the pizzas. The sauce was fantastic, but they seem to be using poor quality mozzarella cheese at this place. It pretty much dissolved and turns to plastic when not piping hot. A switch to a better quality, low moisture mozzarella would make a huge positive difference. Also, the crusts look impressive, but they are far too puffed out and doughy around the entire outside of the pizza, with nothing on the crusts at all. This is unappetizing and too doughy, to the point that the crusts are pretty much just left behind. All of my guests commented on this and that it was such a shame to see about half of each pizza wasted and not really edible. The centre of the pizza is basically razor thin and almost soggy. Much better to have much more even crust with slightly lighter toppings of higher quality cheese. Do this and these pizzas would be really something to talk about. Currently, the pizzas sit at a generous 5-6/10, but they could easily be a 8-9/10 with better attention to detail and quality. Zucchini Salad and Blistered tomatoes were absolutely excellent. Foccacia was pretty good, but needs a higher quality olive oil to raise it from a 6/10 to at least an 8/10. Desserts were all really good. Drinks here are crafted carefully with great attention to quality and detail and are very much worth the price. Hopefully the restaurant will up its food game, and if it does, it will be a consistently attended destination dining place. I'm certainly going to give it another try with our guests. There is real potential here.

Waited a long time for drinks. Prime rib was super fatty and chewy. Great venue, tasty cocktails (smoked old fashioned was deadly) and really good appys.

Pasta was good but overpriced for what you get. You can basically eat the pasta in two bites bc of how little the amount of noodles they serve you. Everything else was average. Funghi pizza was the best dish I guess.
