CHARCUT is a proud female majority-owned and operated destination restaurant and bar from Calgary’s CHAR Hospitality Group – founded by Carrie Jackson and acclaimed chefs Connie DeSousa and John Jackson. Our menu draws inspiration from Italian and Portuguese traditions, a nod to Connie’s heritage, while celebrating seasonal, artisanal, and thoughtfully sourced ingredients. From our handmade pastas and vegetable-forward sharing plates to our house-cured meats, butcher cuts, and rotisserie prime rib of Alberta beef, we take a back to basics, back to flavour approach by evolving simple ingredients. CHARCUT offers a true neighbourhood restaurant experience, a place to gather and connect over great food, drinks, conversation, and company.

The BUTCHERINA Dinner Series debuts with Chef Kiki Aranita, co-chef and former owner of the award-winning Poi Dog restaurant, known for celebrating underrepresented multicultural cuisines. The event offers a high-energy kitchen party followed by a multi course tasting menu inspired by both a collaborating chef and butcher. Held in Butcherina located in the back of CHARCUT University District, the intimate space provides views into Canada's first Butcher Show Kitchen. A portion of proceeds supports the CHAR Hospitality Fund through the Calgary Foundation, directly impacting our local community.

Outstanding food. We had a lovely meal and a 32 ounce steak to celebrate my husband winning a contract. We went late on a Saturday night at 8:30. Service was Outstanding! The ambiance was lacking for us. The tables are pushed close together and the space needs soundproofing. It was extremely loud and my husband any I couldn't hear each other, so we left before dessert. We will 100% have their amazing food again, perhaps go on a weekend or order from skip.

Delicious! Starters were pork belly and fried mozzarella. Went family style with steak, chicken and several sides. Everything was done to perfection. Very tasty, tender and beautifully presented. The Char Gin martini was so smooth and the dessert Espresso martini was decadent. A very enjoyable and memorable evening.

Great vibe and the menu is varied and interesting. Our pasta dishes were first rate. Friendly staff and good service. Will be back.

We absolutely love CHARCUT! The food is always incredible, and the service from Charles is outstanding. He truly goes above and beyond to make each visit special. The location is perfect, and every time we dine here, we leave feeling impressed. Last time we brought friends, and once again, Charles delivered A+ service. Highly recommend this place for a personalized and top-tier dining experience!

We had decided to celebrate our 20th wedding anniversary with a lovely meal at Charcut. We have dined here before, and have always enjoyed our food, and wanted to ensure that we had a certain kind of experience. Cory was a great server - attentive, charming, and responsive. We had brought a special bottle of wine with us to drink, and they seasoned the decanter very well & served it optimally. We opted for the feature board, with Calabrian olives added. We also had the braised octopus, shaved zucchini salad, and the crispy pork belly. The dishes were all well prepared, and we especially enjoyed the octopus. We finished our meal with the salted chocolate dessert, and of course, the Portuguese donuts. Thank you for making our anniversary dinner very memorable!

5 stars all around. All staff are friendly and say hello. Waitstaff were excellent, timely, informative. Food was superb.

For a new restaurant - it was great! You need to lower your bar for service when they are sorting everything out. Perfection won’t happen for a few months. Food was stellar and topped off with a few visits from Connie as she explained the dishes. Wine was incredible and overall value was exceptional. Added bonus to finally have somewhere decent to walk to in the NW.
