Chef Diego Moya puise dans ses expériences américaines, françaises, chiliennes, pour créer une cuisine de saison. Il met en avant le légume, privilégie les circuits courts et collaborent avec des fermiers travaillant dans le respect de l'environnement. Le menu est constitué d'un large choix d'entrées et de plats pouvant être partagés, permettant de découvrir sa cuisine de multiples façons. De vins de terroir produits par des vignerons et vigneronnes, des brasseurs, des distillateurs défendant l'agriculture biologique, biodynamique, naturelle. Tel est le credo des 3000 références de la carte. La sélection est faite par Arnaud Tronche et Pascaline Lepeltier MS, MOF. Join Pascaline for a deep dive into a place she loves so much: Anjou noir and its chenins. Growing up in Angers, she was lucky to discover wine in the unique microsome of the late 90s & early 2000s when the area was going through a revolution, a (re-)birth of dry chenin. Learning from visionary vigneronnes & vignerons, she was exposed to the importance of real farming, of life, intuition, and the respect to make bottles that express the place, the soil, and the soul. This dinner is an invitation to discover this journey, and to explore the diversity of the schisty hills, valleys, and plateaus of the area interpreted by producers she can call friends. It will be a very special evening for those who want a better understanding of chenin!

Chambers is hands down my all time favorite resturant in Manhattan....I feel so lucky that it is within walking distance to my house...all of the food is from local farms/farmers market, most organic, extra virgin olive oil and butter...eg it has a high ranking on the fantastic" Seed Oil Scout" app...that helps people eat PUFA( poly unsaturated fats ) ....I think I have tasted pretty much everything on the menu, each tastes so differnt from everything else and so balanced yummy delish!!!fantastic wine list 2 sommeleliers! incredible craft cocktails....I have and could continue to go on and on ....hands down outstanding !!!

Visiting from Montreal, this was an amazing experience! We ate at the food counter and it was impressive to watch the crew do their magic. The food was very tasty and fresh. One of the best restaurant I have eaten in a long time. I definitely recommend this restaurant.

Amazing innovative food with remarkable products. An outstanding Maitre d'/sommelier who has been a finalist at the recent Best Sommelier of the world Contest (2023), an extraordinary wine list, great service, tables of the proper size and exceptional quality/prize ratio. We couldn't be happier to have discovered that place.
