Carversteak is a reimagining of the classic steakhouse experience offering dry-aged American steaks from artisan producers, Japanese-certified Wagyu steaks and playful vegan selections in a modern environment.

The steakhouse features an expansive bar, a plush main dining room, two private dining rooms (The Knife Shop and Whiskey Room) and a sweeping outdoor terrace overlooking the Las Vegas Strip.

Executive Chef Daniel Ontiveros’ menu highlights include a 42oz Tomahawk Rib Chop, Lobster en Croute (a whole Maine lobster cooked in a puff pastry shell) and a bounty of raw bar items including Hamachi Crudo and seafood towers.

Accompanying the menu is a dynamic beverage program from famed mixologist Francesco Lafranconi featuring seasonal cocktails, an extensive wine list and a tableside martini cart.

PLEASE NOTE: On Friday and Saturday reservations; guests under the age of 18 must be sat by 6:45 pm. Dress code is business casual; flip flops, sandals and hats allowed on patio only.

    This was the worst steak restaurant We have ever been to, and we have been to steakhouse restaurants all over this country. we took a couple of bites out of everything. The only thing we finished was the squash soup and mash potatoes. so we had our food wrapped up so I could give it to a couple of homeless people,and I felt bad about giving them something that had no flavor. When visiting Las Vegas go to Golden steer, Vic and Anthony's, Barry's, SW, Don's prime, Hanks martini steak house, Oceans prime is good but the one in Beverly Hills,CA. Is better, Smith & Wolenski is good, but the best ones are in Chicago,IL. and Boston,MA. Palms steakhouse is good but the best one is in Beverly Hills,CA.Scotch 80 is good, but I mostly go to scotch because I get comps from the Palms Casino.This horrible experience came to a tune of 600 bucks, and they don't even give complimentary bread. so we purchased the bread, and it was not good. The service was good, it's the first time that I have seen so much food come out at the same time, so it was a good thing it didn't taste good, because it would be cold,

    Amazing food and service. The rib cap was incredible. The cocktails were classic and the servers were top notch. The noise level is a little high if you’re looking for an intimate dinner. Overall FIVE stars!

    My wife and I have been here a half dozen times, at the bar for dinner, and had a great experience. This last time was really frustrating. We were in Las Vegas for Spring Break as a family and wanted a nice steak dinner so I booked at Carversteak thinking it would be perfect for an expensive night out. We brought our teenage daughters this time and made a reservation on the dining room. We enjoyed the food but the staff was extremely rude this outing. It’s not like my daughters asked for a kids menu, they ordered nice steaks and for a $600 meal I would expect to be treated with good (not even great) service. Once we ordered Jack disappeared the remainder of our time. I pulled him over a few times during dinner to check on the wine I ordered and asked to turn on the heater for my girls (on the patio and it was cold). He ignored my requests and when the manager checked on us I shared this. Manager fetched out wine half way through dinner. For this amount there are way too many great restaurants and steakhouses in Las Vegas to experience this.

    Food was amazing. I had the foie gras and my wife had the yellowtail appetizer. They were both superb. Then she had the king crab for main course which was also excellent. I had the ribeye cap which was the most delicious piece of meat I have ever tasted. It was perfectly done, crispy on the outside and medium rare on the inside. The restaurant is beautiful and it has a lively fun atmosphere. When we arrived we were graciously greeted by Ivo whom we recognized from his previous positions at other restaurants. He is the director of operations here now. He was incredibly kind making sure we got a table we were happy with and escorted us to the bar for drinks prior to our dinner. Finally must mention our waiter. He was excellent. Very professional and knowledgeable about the menu. The food was delivered at perfect pace, not too fast or slow but just right. This place has it together. Highly recommend.

    Our server, Nina, was amazing. She was attentive and personable. We enjoyed a crab cake appetizer, a wedge salad, a perfectly cooked 8oz filet, and a side of mushrooms. The music playlist was perfect, with great songs and the right volume, not too loud. Carversteak is at the top of our list of must experience Las Vegas restaurants. Thank you, Nina, and staff.

    This place has always been a winner. It’s pricey for sure but good. Staff is attentive. Drinks good. We ordered filets and 2 orders of king crab. This place ALWAYS has the best crab legs. Incredible size. We had a cold order as well as hot. They’re expensive to be sure ($115 for 2 legs) but truly delicious and HUGE. Filets and sides good but the crab steals the show (as in past years).
