Carversteak is a reimagining of the classic steakhouse experience offering dry-aged American steaks from artisan producers, Japanese-certified Wagyu steaks and playful vegan selections in a modern environment.

The steakhouse features an expansive bar, a plush main dining room, two private dining rooms (The Knife Shop and Whiskey Room) and a sweeping outdoor terrace overlooking the Las Vegas Strip.

Executive Chef Daniel Ontiveros’ menu highlights include a 42oz Tomahawk Rib Chop, Lobster en Croute (a whole Maine lobster cooked in a puff pastry shell) and a bounty of raw bar items including Hamachi Crudo and seafood towers.

Accompanying the menu is a dynamic beverage program from famed mixologist Francesco Lafranconi featuring seasonal cocktails, an extensive wine list and a tableside martini cart.

PLEASE NOTE: On Friday and Saturday reservations; guests under the age of 18 must be sat by 6:45 pm. Dress code is business casual; flip flops, sandals and hats allowed on patio only.

This is our favorite steakhouse .Service is everywhere and attentive and steak is always the tops of any others . But probably won’t return as our friends joined us and we couldn’t have a conversation cause the music was just too loud , and the fact the acoustics in there are so bad in the there and their general ambience is too loud with the other people in there. Had to yell at each other to have a conversation. Been there before and always kept it for special occasion but never been like that. . I will say that others have recommended a booth and when leaving the tables in the bar area were quieter

When you make a reservation, be sure to say that you would like a table or booth. They were going to sit us at a table in the middle of the dinning room. It was even nosier and a lot going on. So we asked to be seated at a booth. It was so nice, we could talk to each other and observe the restaurant. The wait staff was very helpful and very attentive. It was great food and an awesome experience.

Gorgeous aesthetic, but extremely loud. Definitely a party vibe! The lighting was a mood - low, but not too dark and no glaring lights. Beware that the “patio” may or may not actually be open air. When we arrived, there were plastic window panels enclosing the huge covered patio. Even though it was dark and cooler outside than inside, the patio wasn’t opened up. It was stifling hot. We ended up moving inside. Hopefully they’ll figure out the ventilation system as the patio area is gorgeous! I have a rare food allergy and they were great about accommodating. I was impressed that their computer system flagged items, which the chef then verified. I had to push for a little more communication about why some things weren’t safe (to be comfortable that there would not be cross contamination on other dishes), but the chef shared more details beyond go/no go with our server when I asked (and i found out that some items get flagged because of prep area proximity to where the allergen is handled in other dishes - love that awareness). The food was delicious , and chef whipped up something on the fly to modify my dish. Overall, I have dined at high end restaurants all over the strip - even for Vegas, I felt like the menu is expensive comparable to similar restaurants. Mixed experience! Would return solely based on the staff’s competency and kindness in handling of my food allergy needs.
