GREAT food and a very friendly, customer-orientated staff. Carlos and his team do a great job. Don’t pass it up (regardless of what you think about the location)…it’s a diamond in the rough!

The food and service are outstanding. The background music could be a bit more background in both volume and type. However, the overall experience is wonderful.

Very outgoing and personable owner. The attention from him was above the call of duty and very much enjoyed. The food was all excellent. Service was top notch. It made for a great evening with friends.

I've been reading about Carlos' Bistro on a good group for forever. I finally got around to talking my wife for a date night and I can say it didn't disappoint. The staff is very friendly, continually checking in and telling stories. Carlos is so personable! We got the Nachos as an app, the filet mignon and the fillet mignon stroganoff for our meals. It was all incredibly delicious and well made. My plate was clean! The risotto was amazing! The drinks from the bar were delicious, and dessert was amazing! It is high end, please be aware of that. But they do have options that don't break the bank. The experience was exceptional. Bravo to Carlos. Hoping as Carlos said, that they'll be around for at least a other 30 years.

We came in to celebrate our final Parents’ Weekend and, after weeks of working his tail off while on restriction with the rest of the Cadet Wing at USAFA, our son absolutely loved every moment of the experience. Carlos (the owner) personally greeted us and helped us choose the perfect wine for our meal/made suggestions for us from the menu. Our waiter was absolutely fantastic, too. The food was AMAZING!! HIGHLY RECOMMEND visiting this bistro for a wonderful, intimate dining experience while in Colorado Springs - make reservations. 10 out of 10, we are definitely coming back!

We enjoyed a lovely diner at Carlos" Bistro. Very interesting menu and charming venue. The appetizers were excellent, and the steaks were done perfectly. A very comfortable evening with the charming host and server.

We ear at this restaurant every time we come to Colorado Springs. You will not be disappointed. Carlos the owner, is right there making sure you have the best experience possible. The food is outstanding and you will have no regrets.

Went for a birthday dinner and had a wonderful experience with great food. We arrived around 530pm and the owner greeted us promptly and was very inviting. Our server Frank did a great job informing us of the menu as it was our first time there and made great recommendations. He also did great at serving multiple tables while still giving us the service we needed! The lobster bisque is AMAZING. And the steak was cooked perfectly. My daughter annihilated her duck breast and my wife enjoyed her clam and mussels pasta! Great food, great service, and great restaurant! Next occasion we WILL be going back!
